This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

July 13- July 19

This week's Produce Box contains:

  • 1 Personal Watermelon
  • 1 qt. Peaches
  • 1 pint blueberries
  • Cherry Tomatoes
  • Butternut Squash
  • Dixie Lee Peas (shelled)
  • Pickler Cucumbers
I also ordered an add on of 4 ears of corn.

Smoothies and baked goodies as well as snacking will use up our watermelon, peaches and blueberries.

Wednesday, July 13- Tonight I will try my hand at homemade Moussaka.  I will take the recipe's advice and make the meat filling earlier in the day.  I will assemble everything but the bechamel in the late afternoon.  Then shortly before baking it I will make the bechamel sauce to pour on top and then bake.

Moussaka- reprinted from Simply Recipes

Meat sauce
  • 2 pounds ground lamb or beef
  • 2 Tbsp olive oil
  • 1 chopped onion
  • 4 chopped garlic cloves
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon black pepper
  • 1 Tbsp dried oregano
  • 2 Tbsp tomato paste
  • 1/2 cup red wine
  • Zest of a lemon
  • 2 Tbsp or more of lemon juice
  • Salt to taste
Bechamel sauce
  • 1 stick unsalted butter
  • 1/2 cup flour
  • 1 teaspoon salt
  • 4 cups whole milk
  • 4 egg yolks
  • 1/2 teaspoon ground nutmeg
The moussaka
  • 3 large globe eggplants
  • 1/2 cup salt
  • 8 cups water
  • 2-3 Yukon gold or other yellow potatoes
  • 1 cup grated mizithra cheese (or pecorino or Parmesan)
  • Olive oil
Prepare the meat sauce
1 Heat the olive oil in a large sauté pan over medium-high heat and brown the ground meat. By the way, the meat will brown best if you don't stir it. Add the onions about halfway into the browning process. Sprinkle salt over the meat and onions.
2 Once the meat is browned and the onions have softened, add the garlic, allspice, cinnamon, black pepper, oregano and tomato paste. Mix well and cook for 2-3 minutes.

3 Add the red wine and mix well. Bring the sauce to a simmer, reduce the heat and continue to simmer gently, uncovered for 20 minutes. Turn off the heat. Taste for salt and add more if needed. Add the lemon zest and the lemon juice. Mix well and taste. If the sauce needs more acidity, add more lemon juice.
Set the sauce aside.

Prepare the potatoes and eggplants
4 Mix the 1/2 cup salt with the 8 cups of water in a large pot or container. This will be the brine for the eggplants.

5 Slice the top and bottom off the eggplants. Cut thick strips of the skin off the eggplants to give them a striped appearance. A little skin on the eggplant is good for texture, but leaving it all on makes the moussaka hard to cut later, and can add bitterness, which you don’t want. (Some moussaka recipes leave the skin on and have you slice the eggplants lengthwise, which is an option if you prefer.) Slice the eggplant into 1/4 inch rounds and drop them into the brine.
6 Let the eggplants sit in the brine 15-20 minutes, then remove them to a series of paper towels to dry. Place a paper towel down on the counter, layer some eggplant on it, then cover with another sheet of paper towel and repeat.
7 As the eggplants are brining, peel and slice the potatoes into 1/4 inch rounds. Boil them in salted water for 5-8 minutes – you want them undercooked, but no longer crunchy. Drain and set aside.

8 To cook the eggplant, broil or grill the rounds. You could also fry the eggplant rounds but they tend to absorb a lot of oil that way. To grill the eggplant rounds, get a grill very hot and close the lid. Paint one side of the eggplant rounds with olive oil and grill 2-3 minutes. When they are done on one side, paint the other side with oil and flip. When the eggplants are nicely grilled, set aside. To broil, line a broiling pan or roasting pan with aluminum foil. Paint with olive oil. Place the eggplant rounds on the foil and brush with olive oil. Broil for 3-4 minutes until lightly browned on one side, then flip them over and broil for a few minutes more. Set aside.

Prepare the béchamel
9 Heat milk in a pot on medium heat until steamy (about 160 degrees). Do not let simmer.
10 Heat the butter in a small pot over medium heat. When the butter has completely melted, slowly whisk in the flour. Let this roux simmer over medium-low heat for a few minutes. Do not let it get too dark.
11 Little by little, pour in the steamy milk, stirring constantly. It will set up and thicken dramatically at first, but keep adding milk and stirring, the sauce will loosen. Return the heat to medium. Add about a teaspoon of salt and the nutmeg. Stir well.

12 Put the egg yolks in a bowl and whisk to combine. Temper the eggs so they don’t scramble when you put them into the sauce. Using two hands, one with a whisk, the other with a ladle, slowly pour in a couple ladle’s worth of the hot béchamel into the eggs, whisking all the time. Slowly pour the egg mixture back into the béchamel while whisking the mixture. Keep the sauce on very low heat, do not let simmer or boil.

Finish the moussaka

13 Preheat the oven to 350°F. Layer a casserole with the potatoes, overlapping slightly. Top the layer of potatoes with a layer of eggplant slices (use just half of the slices).

14 Cover the eggplant slices with the meat sauce. Then layer remaining eggplant slices on top of the meat.

15 Sprinkle half the cheese on top. Ladle the béchamel over everything in an even layer. Sprinkle the rest of the cheese on top.
16 Bake for 30-45 minutes, or until the top is nicely browned.
Let the moussaka cool for at least 15 minutes before serving.
Yield: Serves 8.
 
Thursday, July 14- Dixie Lee Peas and Rice with BBQ Chicken will be dinner tonight.
Dixie Lee Peas and Rice
  • 3 or 4 strips lean bacon, diced
  • 1 small onion, chopped
  • 1/2 red bell pepper, diced
  • 1 clove garlic minced
  • 2 cups fresh Dixie Lee peas
  • 1/2 cup uncooked, white, long-grain rice
  • 2 cups water (or half chicken broth and half water)
  • Salt and black pepper, to taste
In a deep pot, saute bacon 2 or 3 minutes. Add onion, bell pepper and garlic. Continue cooking until vegetables soften slightly and bacon is crisp. Stir peas into the pot; pour in water. Reduce heat to low. Add rice.  Cover and simmer 20 minutes or until the rice is done. Remove from heat and let the pan sit with the lid on 5 minutes.  Toss mixture lightly.  Season with salt and pepper.
Friday, July 15-I will use my butternut squash to make my Butternut Squash Casserole.  I will also grill some pork chops and serve it along with the corn on the cob.

Butternut Squash Casserole- from Williams-Sonoma
Casserole:
4 cups butternut squash puree
1/2 cup sugar
1 cup milk
1 tsp vanilla
1 tsp orange extract
1/4 tsp salt
2 Tbsp all-purpose flour
3 large eggs
4 Tbsp unsalted butter, melted
Topping:
1 cup vanilla wafers, crushed
1/2 cup unsalted butter, melted
1 cup brown sugar

1. Preheat oven to 425 F. Lightly grease a casserole dish (4 - 6 cup capacity).
2. Combine squash puree, sugar, milk, vanilla, orange extract, salt, flour, eggs and melted butter. Pour into the prepared casserole dish. Bake for 45 minutes or until set.
3. Meanwhile, make the topping. In a medium bowl, combine crushed vanilla wafers, melted butter and the brown sugar. Sprinkle over top of the cooked casserole and return to the oven to brown for an additional 10-15 minutes. Serve warm.
Saturday, July 16- Tonight we are going to a BBQ at a friend's home.  No cooking tonight!

Sunday, July 17-  I will make my Southern Green Beans with a grilled steak and Garlic Red Potatoes.
Southern Green Beans
4 slices bacon
1 large onion sliced
4 cans green beans
salt and black pepper

Fry bacon, remove bacon before it becomes crispy.
In bacon fat fry onion until tender.
Pour 4 cans of green beans into pot. If more water is needed add until green beans are covered.
Season with salt and pepper.
Add bacon.
Bring to boil then let Simmer for about 30-45 minutes. (add water as necessary)

Garlic Red Potatoes
2 lbs. red potatoes quartered
1/4 cup butter melted
3 cloved of garlic minced
dash of salt, basil and Tastfully Simple's Onion Onion
1 tablespoon grated Parmesan cheese

Preheat oven 350
Place potatoes in shallow baking dish
In a small bowl mix butter, garlic and spices.  Pour over potatoes and toss to coat.
Sprinkle Parmesan cheese over potatoes.
Bake covered 30 minutes.  Uncover and continue baking an additional 10 minutes or until golden brown.

Monday, July 18-  We still haven't had the fish I have been wanting to make.  As long as the market has something on sale, it's fish tonight!  Will re-post with the actual meal later in the week.

Tuesday, July 19-  If I have leftovers, it will be a leftover night to make room for my next Produce Box!

November 10- November 16

As the Produce Box approaches its close of the season I am astonished not only to find ourselves nearing Thanksgiving but also surprised at the abundance of fresh produce which has entered my family's daily life. Although I have always made it a point to serve at least one vegetable with dinner nightly and stock a variety of fruits in the house for snacking, I have discovered a weekly supply of farm fresh produce as provided my family with a much healthier and richer diet.

This weeks Box contains local Apple Cider, 2 Red Bell Peppers, a large Eggplant, 2 heads of Romaine Lettuce, Sweet Potatoes and Tomatoes.

I never made the White Chili so I may decide to throw it on this week's menu. Unfortunately, my homemade cole slaw was rather bitter. I discovered after the fact, that soaking the cabbage for about 20 minutes helps mellow the bitterness. Good tip to know for next time!

Wednesday, November 10- Tonight I will try making a main course salad for dinner. I am altering a recipe I found on Allrecipes.com with some of my own additions.
Southwest Chicken Salad
1 small can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups shredded Cheddar and Monterey cheese blend
3 tomatoes, chopped
Chopped romaine lettuce
Catalina salad dressing
Southwest Style Chicken
Corn chips

In a large bowl, combine the corn, black beans, cheese, lettuce and tomatoes. Add dressing and mix well. Cut up chicken and placed over salad. Add corn chips before serving.

I may buy prepared Southwest Style Chicken or if I have the time prepare my own.

Thursday, November 11- Garlic and Thyme Pork Chops and Sweet Potato Casserole will be served this evening.

Sweet Potato Casserole
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans
1/4 cup margarine, melted
1/2 tsp ground cinnamon
4 medium sweet potatoes, peeled and halved
1/2 cup sugar
1 1/2 tsp vanilla extract
1 large egg white
1 (5 oz) can evaporated milk

1. Preheat oven 350 degrees
2. Combine first 5 ingredients in small bowl, stirring to form streusel. Set aside
3. Place potatoes in pot covered with water. Bring to boil, cover and simmer 30 min or until tender. Drain. Mash in large bowl.
4. Stir in 1 cup of streusel topping, sugar, vanilla, egg white and milk.
5. Spoon into 2-qt. casserole coated with cooking spray. Top with remaining streusel.
6. Bake for 45 min.

Friday, November 12- Swedish Meatballs served over egg noodles will be tonight's dinner, thanks to a weekend excursion to Ikea!

Saturday, November 13- Date Night!! My husband and I are going out on the town so simple microwaved meals for the kids.

Sunday, November 14- Eggplant Rollatini will be attempted tonight.

I will follow my standard Eggplant Parmesan recipe to fry up the the eggplant however, I will cut them length wise. Once fried, I will loosely follow a recipe I found on Allrecipes.com with my additions.
1-2 cups ricotta cheese
1 large eggs, lightly beaten
1/4 cup shredded mozzarella
4 tablespoons grated Parmesan
2 tsp. basil
1 clove minced garlic
8-10 slices prosciutto
Tomato Sauce
1 cup shredded mozzarella cheese

In a bowl, beat the egg until lightly scrambled. Mix the ricotta in with the egg. Add 1/4 cup mozzarella, 1-2 tablespoons of Parmesan cheese and garlic and gently combine. Fold in basil just to combine. Do not overmix.

Place a slice of prosciutto on eggplant then place a tablespoon of the cheese mixture on 1 end of the eggplant and roll up tightly. Place the eggplant rollatini into a greased (with olive oil) 13 by 9-inch baking dish, seam side down. Continue with remaining eggplant. Evenly distribute the tomato sauce on top of the eggplant rollatini. Season with salt and pepper. Sprinkle with remaining Parmesan and Mozzarella cheese and bake for 15 minutes.

Monday, November 15- Steak Fajitas with peppers and onions will be served for dinner tonight.

Menu October 27- November 2

This weeks Produce Box includes a Butternut Squash, 3 Zucchinis, a pint of Grape Tomatoes, a head of Cabbage, a variety of 8 Apples and surprise items. My box's surprise items included 2 Green Tomatoes, 2 Red Bell Peppers and fresh herbs.

As much as I have tried twice now putting the Lemony Veggies and Couscous on my weekly menu, I still have not made it. Mind you not because I am dreading to prepare this dish but merely due to life circumstances which inevitably tweak my best laid dinner plans. I think I will shelf the recipe for this week, but I do plan on making it soon! I plan on using some of the zucchini for a casserole this week but I also have some left over from the DJ's Berry Patch I picked up last weekend which I'll turn into muffins or bread.

Wednesday- With my husband not home for dinner, I plan on whipping up a turkey soup with the leftover turkey breast from over the weekend. I'll add the leftover peas and carrots from last week as well. I will also throw in a cut up potato or sweet potato if I want to bulk it up more.

Thursday- There is a fundraiser for my daughter's school at Chick-Fil-A so that will be tonight's dinner followed by hosting a Tastefully Simple Party (yummy!).

Friday- With the cooler weather, I plan on preparing Butternut Squash Apple Soup and I will find an interesting way to prepare some Tastefully Simple Beer Bread to accompany the soup. I think I will add some cream to the soup puree as well as some minced garlic and thyme while I am sauteing the vegetables.

Saturday- Tonight's meal will be pork chops and an Eggplant and Zucchini Casserole. (As long as the eggplant from last week holds up.)

Sunday- Halloween usually means pizza for dinner and a Halloween cartoon before the kiddies venture out and go trick or treating. So tonight will be pizza and candy!!

Monday-It's hearty good eats this evening. I will be frying up chicken with Fried Green Tomatoes along with some gravy and mashed potatoes.

Tuesday-I'm not sure about tonight's meal but I will probably use the cabbage most likely as slaw. I'll need to think about this meal some more. ***Alright I gave it a little thought and I might make pulled pork sandwiches, it goes hand in hand with cole slaw!

July 14th - July 20th Menu


Wednesday is Delivery Day!
I was delighted to get my Produce Box early today. Why? Because that means we can have watermelon with lunch!

This weeks contents include a personal Watermelon, a pint of Blueberries, 7 Peaches, 2 Bell Peppers, a basket of Roma Tomatoes, Butternut Squash, 4 small Japanese Eggplants, 2 small White Eggplants and 2 Pickling Cucumbers.

Our family schedule this week keeps us apart for a few nights which in turn means leftovers Wednesday (to make room in the fridge) and possibly take out Thursday.
So the watermelon will be gobbled up with lunches, breakfast and snacks along with some of the peaches. Over the weekend I will make fresh Blueberry Muffins.

Our first meal made with our Produce Box will not occur until Friday with Eggplant Parmesan and homemade sauce using the 2 white eggplants, a pepper and the roma tomatoes. I will be making my tomato sauce for the first time. I altered the sauce recipe by using 10 tomatoes in the puree and 3 for the chopped tomato, 1 tbsp dried oregano, 1 tbsp dried rosemary, and 1 tbsp of basil. I actually forgot to pick up celery at the market so I omitted them. After 2 hours of simmering I added 2 tsp of ground pepper and 1 tsp salt. Since my family isn't especially fond of chunky sauce, I used a potato masher to smooth out some of the chunky pieces. The sauce was a success! And the white eggplants delicate flavor enhanced the meal. Husband gave it 2 thumbs up!

Saturday I will be using a fellow Produce Box's recipe for Peach Chicken using the rest of my peaches. We will have Garlic Grilled Red Potatoes and green beans with dinner. I hope to get those ingredients at a local farmers market, DJ's Berry Patch or Western Wake Farmer's Market.

Sunday I will make Butternut Squash Risotto with Shrimp and possibly a side salad or loaf of bread. I have made risotto in the past with pleasing results. I am eager to taste how this recipe will turn out.

Monday will be marinated chicken fajitas using the marinade from the steak fajitas we had last week. I told you it was DELICIOUS! Along with grilled peppers (from my Produce Box) and onions. I'm also thinking of a corn and bean salad again if I can find a different recipe or modify and tone down last weeks side. UPDATE: I found a Black Bean Salad recipe which I will make Monday.

Tuesday is Asian Peanut Noodle Toss.
Taste of Thai Peanut Noodle Toss Recipe
1/2 Box (8 oz) Rice Noodles
1 TBSP oil
3 cups favorite vegetables chopped (I used 3 of the Asian eggplants, the last pepper & a squash from our garden)
1 tsp Salt
1 13.5 oz can of Coconut Sauce
1 packet (both inner envelopes) Peanut Sauce Mix
1 1/4 lbs chicken or beef thinly sliced

Soak noodles according to stir fry directions. Heat oil in wok over medium high heat. Add vegetables, salt and meat. Saute 3 minutes. Add coconut milk and peanut sauce. Mix. Bring to boil while stirring and boil 3 minutes. Add drained noodles and combine. Cook while stirring until noodles are firm but tender. Add peanuts for garnish.

July 7- July 12 Menu

Wednesday is Produce Box delivery and therefore begins my week's worth of menus.

Wednesday was Ratatouille Pasta with sausage. I added pan fried cut up Italian sausage to this meal for my husband, who enjoys having some kind of meat in his dishes. A loaf of bread and a bottle of red accompanied this delicious meal.

Thursday's meal consisted of Zucchini & Corn Cakes made with fresh corn from my Produce Box. Honey Mustard Seasoned Chicken (4 chicken breasts pounded, placed in my Pampered Chef Deep Covered Baker with Honey Mustard Dressing spread over them & microwaved for 12 minutes) and home-made Peach Cobbler (recipe to post later) for dessert rounded out our meal.

The chef was off Friday as we celebrated my daughter's first day of school with dinner out.

Saturday was the first time I cooked or for that matter ever tasted spaghetti squash. I used the spaghetti squash from my Produce Box and cooked up Spicy Spaghetti Squash with a few alterations. I used chop meat in place of the ground turkey and I omitted the capers since I did not have any on hand. I also roasted the squash first instead of microwaving it. (Halved the squash, spoon out the seeds, a TBSP of butter in each, sprinkled some oregano and garlic powder over each half and roasted for about 1 hour) Again some artisan bread from my local supermarket and a bottle of red paired well with this first time meal. The squash had a slightly crunchy texture but was delicious and mimicked spaghetti noodles rather well.

Sunday my darling husband gave me the night off and prepared a Southwestern inspired menu of Corn and Black Bean Salad, again using a few ears of corn from our Produce Box. We enjoyed trying a cold salad like this however we felt the balsamic vinegar was too strong flavored for us. We also had steak fajitas which had been marinated. These were WONDERFFUL! My husband also grilled up some onion and peppers, of course using one of the red bell peppers from our Produce Box.

Monday I used the last of the corn and blueberries from our Produce Box. I baked Blueberry Pie, I think this may have been the first time I baked a blueberry pie. I altered the recipe based on other reviewers comments and used 1 cup of sugar and 5 TBSP of cornstarch. This is very good warmed with a scoop of vanilla ice cream on top. Dinner I prepared Corn Pudding using a fellow Produce Box's recipe which was served with fried chicken and gravy.

Tuesday I treated myself and my daughters to some take out. Hey we've been eating healthy and at home, we deserve a treat (and a night off)!
