This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

Below is a compilation of weekly meals using the produce delivered by The Produce Box as well as some other recipes which have inspired me.

April 4- April 11

Our box this week consisted of:
  • Carrots plus a substitution of carrots for grapefruits
  • Green Beans plus extra add on of green beans
  • Kale
  • Strawberries
Friday, April 4-  Due to the first golf lesson of the season, we opted to go out to dinner after lessons.

Saturday, April 5- I had intentions of cooking but with the husband working on an outdoor project all day, take out was easier.

Sunday, April 6- I picked up marinated steak tips which we grilled along with oven baked red potatoes and roasted asparagus.

Monday, April 7-  I put aside a few carrots to add to my risotto this evening from our box.  The other carrots were blanched and frozen for later use.  I will serve the risotto with shrimp and sliced bread.
I usually use the recipe on the side of the Harris Teeter box but I misplaced that recipe.  Tonight I am adapting a basic risotto recipe found online at Chow.com
Risotto
  • 2 quarts low-sodium chicken or vegetable broth
  • 1/4 cup olive oil, plus more for drizzling
  • 1 medium yellow onion, finely chopped
  • 1-2 cloves garlic minced
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups Arborio or Carnaroli rice
  • 1 cup dry white wine
  • 1/4 cup finely grated Parmesan cheese, plus more as needed
  • 1/4 cup coarsely chopped fresh Italian parsley leaves
  • Juice of half a lemon
  1. Place the broth in a medium saucepan over low heat and keep it at a very low simmer. 
  2. In a large wide pot or Dutch oven, heat the measured oil over medium heat until shimmering. Add the onion and garlic cook, stirring often, until the onion is translucent, about 5 minutes.
  3. Add the rice and cook, stirring, until the kernels start to crackle, about 1 to 2 minutes. Stir in the wine and let simmer, stirring often, until all of the liquid has been absorbed, about 2 to 4 minutes. Pour a ladleful of the simmering broth over the rice. Let simmer, stirring constantly, until the rice absorbs the liquid. Continue adding broth, stirring and letting it absorb, until the rice is al dente, about 20 to 30 minutes (you may not use up all of the broth). Taste as you go for doneness, seasoning with salt and pepper as needed.
  4. When the rice is done, remove from heat and stir in the Parmesan and parsley. Taste and season with more salt, pepper, and Parmesan as needed. Just before serving, loosen the risotto to the desired consistency with a little more broth or hot water and serve immediately. Drizzle each serving with olive oil.
Tuesday, April 8-  We have enjoyed the Kale with Orzo recipe many times and it allows any protein accompaniment.  Tonight I serve it with Italian sausage.  I may eliminate the beans in tonight's meal.

Orzo with Kale
  • 1/4 teaspoon ground turmeric
  • 1 cups uncooked orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, sliced
  • 1 Red Bell Pepper, diced
  • 1 cup Chicken Broth or White Wine
  • 1/4 teaspoon crushed red pepper flakes
  • 1 bunch kale, stems removed and leaves coarsely chopped
  • 1 15oz can of white beans drained and rinsed
  • 1 diced tomato or cherry/grape tomatoes halved
  • 1 large lemon, juiced
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Parmesan cheese, or to taste
  • salt and black pepper to taste

Directions

  1. Bring a large pot of lightly-salted water to a boil; sprinkle the turmeric over the boiling water and stir in the orzo; return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes; drain. Scrape into a mixing bowl and set aside.
  2. While orzo is cooking, Heat the olive oil in a large skillet over medium heat. Cook the garlic and red pepper in the hot oil. Add red pepper flakes and broth or wine.  Stir the kale into the broth, cover the skillet with a lid, and cook for 10 minutes. Remove the cover and  add the beans.  Continue cooking and stirring until the kale is tender, about 10 minutes more (add more liquid if necessary). Stir the kale mixture into the orzo along with the lemon juice, nutmeg, Parmesan cheese and tomatoes. Season with salt and pepper. Serve warm or at room temperature.

Wednesday, April 9-  I reserved some of the blanched green beans for this evening's meal, Chicken Pot Pie.
 
Chicken Pot Pie
  • 2 deep dish pie shells 
  • 1 can of cream of chicken soup (per a friend's suggestion I am using cream of chicken with herbs)
  • Combination of fresh & frozen veggie mix- about 2 cups
  • 2-3 cups cooked chicken 
  • 3/4 cup milk 
  • Salt and pepper to taste
  • 1/2 teaspoon thyme
  1. Boil chicken in chicken broth.  After it is cool cut in to small pieces 
  2. Reserve broth and boil fresh or frozen vegetables for 5 minutes and drain.
  3. Pre heat oven 375 degrees 
  4. Mix chicken, vegetables, soup and milk in a medium bowl 
  5. Add salt and pepper to taste and thyme
  6. Pour mixture in pie crust cover with 2nd pie crust 
  7. Cook pie for about 30 minutes or until crust is golden brown.  Allow to cool for 5-10 minutes before slicing.
Thursday, April 10-  A simple pasta  meal will be tonight's meal considering we have another activity right after dinner.

Friday, April 11-  Tonight is golf lessons and I will need to stay the entire lesson, which means most likely take out tonight.

Mini Menu October 1 & 2

I neglected to buckle down and consistently develop a weekly menu.  As a result, there has been more trips to the grocery store, more take out and ever expanding waist lines!  So with the start of a new month, comes the hope of being better at consisently developing a weekly menu. (With the delivery of my Produce Box Wednesday, this is a very short menu.)

With the 2 zucchinis that came in last week's Produce Box, I plan on baking 2 loaves of Zucchini Bread this afternoon.

 Zucchini Bread

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 2 cups white sugar
  • 3 teaspoons vanilla extract
  • 1 cup vegetable oil
  • 3 cups grated zucchini
  • 1 cup chopped walnuts (optional)
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift together flour, salt, soda, cinnamon, baking powder.
  3. Beat eggs. Add and mix well sugar, vanilla, and oil. Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into 2 ungreased loaf pans.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour.

Monday, October 1-  With the rain coming down and the cool gloomy weather and 3 butternut squashes sitting on my counter top, I am inspired to make Risotto with Butternut Squash and White Beans.  I may serve this with Italian sausage or ham along with a loaf of bread on the side.

Risotto with Butternut Squash and White Beans (reprinted from Allrecipes.com)
  • 1 butternut squash - (roasted and mashed)
  • 1/4 cup extra-virgin olive oil
  • 1 onion, diced
  • 1 small tomato, diced
  • 3 cups Arborio rice
  • 1/2 cup white wine
  • 1 teaspoon dried marjoram (optional)
  • 1 teaspoon dried oregano (optional)
  • 1 teaspoon dried basil (optional)
  • 6 cups chicken broth, or more as needed
  • 1 dash hot pepper sauce, or more to taste
  • 1 (14 ounce) can small white beans, drained
  • 1/4 cup shredded Parmesan cheese
  • 3 tablespoons chopped fresh parsley
  1. Roast butternut squash in oven seasoned with butter, cinnamon and nutmeg. Transfer squash to a bowl and mash.
  2. Heat olive oil in a skillet over medium heat. Cook and stir onion in the hot oil until softened, 3 to 5 minutes. Stir tomato into onions until onions become translucent, 3 to 5 more minutes. Add Arborio rice to onion mixture and stir to coat with oil; cook and stir until rice becomes translucent with a white spots in the middle of each grain, about 2 minutes.
  3. Stir white wine into rice mixture; cook and stir until wine is completely absorbed, 2 to 4 minutes; add marjoram, oregano, and basil. Pour chicken broth into rice mixture, about 1/2 cup at a time, stirring until liquid is absorbed, until rice is creamy but firm to the bite, 20 to 25 minutes. Stir squash into rice mixture until fully incorporated. Remove from heat.
  4. Stir hot pepper sauce, white beans, Parmesan cheese, and parsley into risotto until cheese is melted. Season with salt and black pepper.

Tuesday, October 2-  I need a relatively simple and quick meal tonight since one of my children has an evening activity.  Crock Pot Santa Fe Chicken served in tortillas sounds like the way to go!

Crock Pot Santa Fe Chicken

Servings: 8 servings Size: 1 cup Old Points: 3 pts Points+: 4 pts Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g
  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  • salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla (extra pts).

January 9- January 15

Well due to a wonderful mild Saturday, I didn't make the dinner planned.  So the Pork Cider meal got bumped to this week.  Also bumped to a later day is the Barley Stew.  Even with the best of intentions, life complicates plans.

Monday, January 9-  Tonight is leftover night.  

Tuesday, January 10-  I will be making the Barley Beef Stew meal tonight.  I stumbled upon this recipe on allrecipes.com  I took other reviewers suggestions and the below recipe is based on them. 
Slow Cooker Beef Barley Soup  WW Points 7
  • 1 1/2 lbs. stew meat cubed
  • 1 onion, chopped
  • 2 tablespoons oil
  • 2 cloves garlic minced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 6 cups water*
  • 6 cubes beef bouillon cube*
  • 1 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/4 teaspoon ground black pepper
  • 2 (14 ounce) cans diced tomatoes
  • 3/4 to 1 cup pearl barley (not instant)
  • 3 cups frozen mixed vegetables
  • salt to taste
  • ground black pepper to taste
  • **6 cups of beef broth can be substituted for the 6 cups water and beef boullion

Directions

  1. Heat oil in pan and brown stew meat with chopped onion on stove top.  Remove and add to slow cooker.
  2. Add to slow cooker all ingredients except frozen vegetables.  Cook on low for 8-9 hours.
  3. Add frozen vegetables increase to High and cook 30-45 minutes.
  4. Season with additional salt and pepper to taste. 
Wednesday, January 11-  Tonight I will make the Cider Pork Chop Stew Dinner.  This recipe was originally written for the stove top.  I plan to use my crock pot instead, as others on allrecipes.com have done, and serve it more as a stew.
 Cider Pork Chop Stew Dinner 9 WW Points
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 bone-in pork loin chops, 1 inch thick
  • 1 tablespoon olive or vegetable oil
  • 2 cups apple cider
  • 4 medium red potatoes, cubed
  • 1 medium onion, cut into 1/2-inch pieces
  • 1 large carrot, cut into 1/2 inch pieces
  • 1 small turnip or rutabaga, peeled and cubed
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup half-and-half cream

Directions

  1. Combine the thyme, salt and pepper; rub over both sides of pork chops. In a large skillet over medium heat, brown the chops in oil on both sides. Remove and cut in small chunks.
  2. Add cider to the pan, stirring to loosen any browned bits. Place the potatoes, onion, carrot, turnip and pork chops into slow cooker.  Pour juices from pan over mixture.  Heat on low for 6-8 hours.
  3. For gravy, pour pan juices into a saucepan and bring to a boil; cook, uncovered, until reduced to 3/4 cup. In a small bowl, combine the flour, nutmeg and cream until smooth. Stir into reduced liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. 
  4. Pour gravy over meat and vegetables.  Serve in bowls.  Suggestion to serve over egg noodles or rice for a heartier meal. 
Thursday, January 12-  With not everyone home for dinner and book club to get to, a quick simple meal is in order.  Chicken Fajitas made with prepared chicken and sauteed peppers and onions.
Friday, January 13Butternut Squash Risotto 6 WW Points using my old stand by risotto recipe, with a few additions. First, I will add 2 cloves of minced garlic to the onion. Second, I will add cinnamon and nutmeg to my mashed butternut squash. Lastly, I will use a 1/2 cup of parmesan cheese. By the way my old and reliable risotto recipe can be found on the side of Harris Teeter Arborio Rice. I will add some cut up tomato to the risotto and some shrimp to round out the dish.   I will add chicken or Italian sausage to the risotto for a fuller meal.
Saturday, January 14-  I have been wanting seafood.  Maybe a shrimp scampi or perhaps beer battered fish?  I will need to give this a little more thought.
 Sunday, January 15-  Giants Playoff Game!  It will be pizza tonight while watching the Giants win over Green Bay! ;)

Thanksgiving Meal keeps giving!

As with most families, we have turkey leftovers from our Thanksgiving meal.  Of course I knew we'd have a bunch, considering I roasted a 24 lb. bird for 3 adults and 2 small kids!  But I have enjoyed reinventing different ways to use up our leftover turkey.  I had already made earlier, the stuffing patties.  Yummy!  Of course there are turkey sandwiches.  But this week I am using the last of my turkey in 2 different dishes as outlined below.  Of course the casseroles have been the accompaniments to our turkey creation meals.  Overall cooking has been easy these last few days!

Monday, November 28-  From Pampered Chef, I enjoy making this recipe with leftover turkey (it is also good with leftover chicken).
Turkey Cranberry Ring
2 packages (8 oz) refrigerated crescent rolls
½ Cup Mayo
2 T. honey Dijon mustard
½ tsp coarsely ground pepper
2 Cup (12 oz) Chopped turkey
½ Cup sliced celery
3 T. fresh parsley
½ Cup sweetened dried cranberries
1 Cup (4 oz) Shredded Swiss cheese
¼ Cup walnuts, coarsely chopped
1 egg

Directions:
Pre-heat oven to 375°

Unroll the crescent roll container and separate the rolls. Place 8 of the triangles in a ring, wide edge of the triangle facing inward, around a circular baking stone with the corners touching. The points of the triangle will hang off the edge of the stone a bit.

Arrange the additional 8 triangles in the center of the ring, seaming wide and to wide end, points inward. Do not seam the sides of the inside triangles, only the wide ends.

In a medium sized bowl mix together the mustard, mayo and pepper. Chop the turkey, celery & parsley and blend in with the mayo-mixture. Grate the cheese and mix in as well.

The original recipe calls to add the walnuts after the mixture is on top of the crescent rolls but you can add it right into the mix or omit entirely.

Scoop the turkey mix onto the center of the wide-end seams. Fold the tips of the crescent roll triangles over each other to make a wreath and seal together. When you’re done the crescent rolls should cover the turkey mix completely. Seam together the edges.

In a small bowl, separate the egg white and discard the egg yolk. Beat the egg white, then brush on to the top of the ring.

Bake for 25- 30 minutes or until golden brown

Tuesday, November 29-  With the onset of cold weather, I am taking the lead with Turkey Noodle Soup.
Turkey Noodle Soup
  • 1 tsp olive oil
  • 2 1/2 cups wide egg noodles
  • 10 cups chicken broth
  • 1 teaspoon poultry seasoning
  • 1 clove minced garlic
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup diced carrot
  • 1 cup of peas or green beans
  • 1 tsp basil
  • 1tsp oregano
  • 1/2 tsp black pepper
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 3 cups diced, cooked turkey meat

Directions

  1. In a large pot or Dutch oven, heat olive oil.  Add garlic, onion and celery.  Saute for 5 minutes.  Add remaining vegetables and continue sauteing for additional 5 minutes.
  2. Combine broth and poultry seasoning into pot. Bring to a boil.
  3. Add noodles.  Reduce heat, cover, and simmer 15 minutes.
  4. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in turkey, bring to a boil.
  5. Reduce heat and simmer for 15 minutes or heated through. 
Wednesday, November 30- I never made the below risotto recipe over the summer as I had posted in an earlier blog.  Tonight I will make this meal and add sliced Italian sausage to the risotto for a fuller meal.
Risotto with Tomato, Corn and Basil
  • 2 1/2 cups water
  • 2 cups milk
  • 2 tablespoons butter
  • 1 cup minced onion
  • 2 clove garlic, minced
  • 3/4 cup uncooked Arborio rice
  • 3 tablespoons white wine
  • 1 medium tomato-peeled, seeded & chopped (I will substitute a small can diced drained tomatoes)
  • 1 cups corn kernels
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil leaves, cut into thin strips
  • 1/2 teaspoon salt
  • ground black pepper to taste

Directions

  1. Combine the water and milk in a medium size pot or saucepan, heat the water and milk to a simmer. Keep the pan over low heat.
  2. Melt the butter in a large casserole or skillet over medium high heat. Add the onion and cook for 3 to 4 minutes, stirring occasionally. Add the garlic and the rice, stir constantly for 1 minute. Add the white wine and stir until completely absorbed.
  3. Begin to add the heated milk-water mixture 1/2 cup at a time, stirring frequently. Wait until each addition is almost completely absorbed before adding the next. When the rice has cooked for 15 minutes and most of the liquid has been incorporated, add the corn kernels and tomatoes along with the end of the milk-water mixture. Cook, stirring frequently, until the rice is tender but still slightly chewy.
  4. The risotto should take 18 to 20 minutes of cooking all together. Stir in the Parmesan cheese, most of the basil, and the salt and pepper. Spoon the risotto immediately onto plates, top with the remaining basil strands, and serve.
Thursday, December 1-  Since it's just us girls this evening, and my refrigerator is packed full with leftovers, tonight is leftover night (or better known as empty the fridge!).
Friday, December 2-  Pork Chops and Potato Pancakes.  Although I have included it in my menu recently, I haven't made it.  But tonight I will make my favorite, potato pancakes (will include recipe later).
Saturday, December 3- It is the annual Apex Christmas Parade.  We will arm ourselves with Bojangles, hot chocolate, muchkins, chairs and blankets to camp out a great spot along the parade route tonight.
Sunday, December 4- The NY Giants play at 4pm and we get it on the television.  That means pizza and wings!

February 7- February 15

The Microwave White Chicken Chili was pretty good.  Still doesn't beat my slow cooker recipe but for a very easy and quick dinner, this was great!  I never made the Lemon Shrimp (again)  or the Beef Taco Bake.  My weekly menu got altered and those dishes got bumped for another time.

Monday, February 7-  Tonight is German inspired- Pork Schnitzel with Spaetzle.  I will make a gravy and serve a vegetable along with the meal.

Tuesday, February 8-  I am thinking an Asian inspired meal with shrimp for dinner tonight, perhaps Pad Thai.

Wednesday, February 9-  Since it's just the girls tonight, I may make breakfast for dinner.  My daughters enjoy this special treat.

Thursday, February 10-  My husband will be late to dinner tonight.  So I need something that reheats well.  I will make my BBQ Chicken Sandwiches in my Pampered Chef Covered Baker.  It cooks quick in the microwave, it's real simple to make and can be reheated easily for my husband.  I'll add homemade macaroni salad to the meal to round out the dish.

BBQ Chicken Sandwiches
olive oil
3 or 4 chicken breasts
Barbecue Rub or Grilling Seasoning

1. Rub oil on to chicken and then rub thoroughly with Barbeque Rub or Grilling Seasoning.
2. Place in Deep Covered Baker in microwave for 8-11 minutes.
3. Meanwhile, make barbecue sauce** (see below).
4. When chicken breasts are cooked, take out of deep covered baker and place on cutting
board and fork pull them apart OR cut up with the Salad Choppers right in the Baker. Place pulled chicken back in baker and add barbecue sauce (about ½ - 2/3 of recipe).
6. Serve with buns.


Sauce:  
1 cup ketchup
¼ cup brown sugar, firmly packed
2 tablespoons Barbecue Rub
2 teaspoons vinegar
Combine ingredients in (2-qt.) Saucepan. Bring to a boil, stirring occasionally; remove
from heat. Reserve half of the sauce for serving.


Friday, February 11- I am catching a flight North tonight.  So we will eat something quick between picking my husband up from work and before I jet off to the airport.

Monday, February 14- Since I am returning this evening around dinner time, I am assuming we will be picking up take out for the family tonight.

Tuesday, February 15- I plan on cooking up Risotto with Tomato, Corn and Basil along with some Italian Sausage or maybe Shrimp for dinner. A bottle of wine and fresh bread will nicely round out tonights meal.  Of course this is assuming I jump back into the thick of things; otherwise, I for see something more simple like pasta and sauce for dinner.

September 15- September 21

Today's Produce Box is the last box for the Summer season. In 2 weeks the Produce Box will be offering Fall boxes filled with local farm's Fall Harvests. I am excited to see what those offerings will include. This week I received 4 lbs. of Sweet Potatoes, 5 Cucumbers, 1.5 oz of fresh Basil, 2 large Onions, a pint of Grape Tomatoes, 3 Butternut Squashes and local Grape Cider.

I am thinking of using my Pumpkin Bread recipe and substituting the pumpkin with butternut squash. I'll let you know how that works.

Last week I used cucumbers in a tomato sauce. Something different to use up my abundance of cukes. My husband is not a cucumber lover so he didn't care for the addition of the cucumbers to the sauce. I however, thought the sauce was excellent. Of course I made a few alterations to the recipe. I added one can of crushed tomatoes, 1-2 tablespoons of tomato paste and ground beef Overall I enjoyed this sauce and am wondering if I could shred the cucumbers to hide them from my husband? Wednesday, Sept. 15
- Grilled steak served with Cinnamon Sweet Potato Fries. (The recipe calls for making them chips but I plan on baking them as fries and adding a little garlic powder and ground pepper to the mixture.)

Thursday, Sept. 16- With our crazy Thursday schedule, I am either opting for sausage hoagies on the grill or take out.

Friday, Sept. 17- Butternut Squash Risotto using my old stand by risotto recipe, with a few additions. First, I will add 2 cloves of minced garlic to the onion. Second, I will add cinnamon and nutmeg to my mashed butternut squash. Lastly, I will use a 1/2 cup of parmesan cheese. By the way my old and reliable risotto recipe can be found on the side of Harris Teeter Arborio Rice. I will add some cut up tomato to the risotto and some shrimp to round out the dish.

Saturday, Sept. 18- With yard work on the agenda all day, I would like to keep tonight's dinner simple. I plan to make the Cucumber-Tomato Sauce again using the shredded cucumber and a dash of chopped fresh basil over pasta along with a loaf of bread.

Sunday, Sept. 19- Seasoned Grilled Pork Tenderloin (I'll make up my own rub using some chopped fresh basil, lemon pepper, garlic powder, salt and chopped onion) with Grilled Sweet Potatoes. I made these potatoes a few week's ago and everyone (even the kids) ate these up!

Grilled Sweet Potatoes
2 large sweet potatoes, sliced
1 apple - peeled, cored and thinly sliced
1/2 tsp ground cinnamon
2 tbsp brown sugar
1 tsp white sugar
drizzle of maple syrup
1/4 cup butter

Directions
1. Preheat an outdoor grill.
2. In a bowl, toss the sweet potato and apple slices with the cinnamon and sugar. Place on a large piece of aluminum foil. Drizzle with maple syrup and top with butter. Tightly seal foil around.
3. Place foil packet on the grill, and cook 40 minutes, turning every 5 to 10 minutes, until potatoes and apples are tender.

Monday, Sept. 20- I'll break out the crock pot tonight for Chili. I enjoy crock pot meals for the ease of preparing a sumptuous dish. With a little prep work in the morning by evening I will have an awesome and hearty meal!

Tuesday, Sept. 21- Most likely tonight will be left overs however, on the off chance all the left overs were already eaten for lunches I am thinking of pork chops and potato pancakes.

Back to Basics Aug. 11-Aug. 17

Back to Basics

The contents of this weeks Produce Box were not among my family's list of favorites. So we skipped this weeks delivery. Now what is a girl suppose to do without her weekly Produce Box? That brought me back to basics.

Before I discovered the Produce Box and later in the early winter, I will be left to my own devices to plan my weekly menu. Where do I start?

My freezer and refrigerator are my first stops. Based on what I have stock-piled from previous meat sales will begin to shape my weekly menu. Any fresh produce that needs to be used up? This too will influence my menu planning. My last kitchen stop will be my cupboards and pantry. A couple of cans of black beans? Might inspire me to make chili or a Mexican dish. Lastly, I take into account what I currently have on hand and delve into my cookbooks and the internet for final inspiration.

Of course outside factors will shape my weekly menu too. Wednesdays my husband is usually not home for dinner. Therefore, I plan a simple meal or even a meal he isn't too fond of that evening.

It is Summertime and fresh produce is bountiful at local farm stands and farmer's markets. I plan on making what has become a weekly stop for me at DJ's Berry Patch to pick up fresh fruits and vegetables.

Wednesday- My girls and I are on our own for dinner tonight. At present time I am not sure what simple meal I will whip up but a good guess would be grilled cheese sandwiches or breakfast for dinner. Or maybe I'll treat the girls to Chick-fil-a (their favorite restaurant).

Thursday- Today's meal was actually the last dinner I decided upon. I think reading a recent Facebook post from a friend planted the inspiration of tonight's dinner, Flour Tortilla Pizzas. I'll use shredded mozzarella cheese, my homemade tomato sauce, slices of fresh tomato & onion and sliced chicken to make these up. I will season and cook the chicken earlier in the day and then use slices for the pizzas. I will also add some herbs and spices to kick up the flavor for our pizzas! I buy chicken breasts in bulk at BJ's so we always have chicken on hand. I made up homemade sauce over the past 2 weeks, so that was already on hand. I picked up some of the fresh produce on my weekly visit to DJ's Berry Patch.

Friday- I plan on cooking up Risotto with Tomato, Corn and Basil along with some Italian Sausage for dinner. A bottle of wine and fresh bread will nicely round out tonights meal. I enjoy making homemade risotto so of course I have an ample bag in my cupboard. Since I had a weekly menu plan, I was able to pick up the produce for this recipe while I made my trip to DJ's Berry Patch.

Saturday- This has become one of my favorite new dishes, Squash and Zucchini Burritos. I discovered this dish through a friend. There after, I added my twist and viola! A sumptuous summer dish. I will not use all the tortillas for Thursday's meal so I will use the remaining burrito wraps for this meal. I had canned black beans and salsa verde in my pantry. And of course with some pre-planning, the produce I picked up on my trip to the farm stand.

Sunday- I plan on making Grilled Shrimp Skewers. The recipe actually calls for apple but we have always omitted it. The spicy yet sweet flavors of the marinade are to die for! This has quickly become one our favorite ways to prepare grilled shrimp. I serve it with the remaining risotto I made Friday and a green salad. I usually have frozen shrimp in my freezer.

Monday- Again I buy most of my meats in bulk at BJ's. Unless the local grocery store is running a particular sale on a certain meat I find the prices normally lower at bulk stores. With an extra freezer in our garage storage isn't a problem. I recently restocked pork chops.

Tonight we will be having Grilled Rosemary Pork Chops accompanied with Southern Green Beans and Rosemary Red Potatoes.

Southern Green Beans
4 slices bacon
1 large onion sliced
4 cans green beans
salt and black pepper

Fry bacon, remove bacon before it becomes crispy.
In bacon fat fry onion until tender.
Pour 4 cans of green beans into pot. If more water is needed add until green beans are covered.
Season with salt and pepper.
Add bacon.
Bring to boil then let Simmer for about 30-45 minutes. (add water as necessary)

Tuesday- There is good chance tonight will be leftovers to make room for our next Produce Box delivery!

July 14th - July 20th Menu


Wednesday is Delivery Day!
I was delighted to get my Produce Box early today. Why? Because that means we can have watermelon with lunch!

This weeks contents include a personal Watermelon, a pint of Blueberries, 7 Peaches, 2 Bell Peppers, a basket of Roma Tomatoes, Butternut Squash, 4 small Japanese Eggplants, 2 small White Eggplants and 2 Pickling Cucumbers.

Our family schedule this week keeps us apart for a few nights which in turn means leftovers Wednesday (to make room in the fridge) and possibly take out Thursday.
So the watermelon will be gobbled up with lunches, breakfast and snacks along with some of the peaches. Over the weekend I will make fresh Blueberry Muffins.

Our first meal made with our Produce Box will not occur until Friday with Eggplant Parmesan and homemade sauce using the 2 white eggplants, a pepper and the roma tomatoes. I will be making my tomato sauce for the first time. I altered the sauce recipe by using 10 tomatoes in the puree and 3 for the chopped tomato, 1 tbsp dried oregano, 1 tbsp dried rosemary, and 1 tbsp of basil. I actually forgot to pick up celery at the market so I omitted them. After 2 hours of simmering I added 2 tsp of ground pepper and 1 tsp salt. Since my family isn't especially fond of chunky sauce, I used a potato masher to smooth out some of the chunky pieces. The sauce was a success! And the white eggplants delicate flavor enhanced the meal. Husband gave it 2 thumbs up!

Saturday I will be using a fellow Produce Box's recipe for Peach Chicken using the rest of my peaches. We will have Garlic Grilled Red Potatoes and green beans with dinner. I hope to get those ingredients at a local farmers market, DJ's Berry Patch or Western Wake Farmer's Market.

Sunday I will make Butternut Squash Risotto with Shrimp and possibly a side salad or loaf of bread. I have made risotto in the past with pleasing results. I am eager to taste how this recipe will turn out.

Monday will be marinated chicken fajitas using the marinade from the steak fajitas we had last week. I told you it was DELICIOUS! Along with grilled peppers (from my Produce Box) and onions. I'm also thinking of a corn and bean salad again if I can find a different recipe or modify and tone down last weeks side. UPDATE: I found a Black Bean Salad recipe which I will make Monday.

Tuesday is Asian Peanut Noodle Toss.
Taste of Thai Peanut Noodle Toss Recipe
1/2 Box (8 oz) Rice Noodles
1 TBSP oil
3 cups favorite vegetables chopped (I used 3 of the Asian eggplants, the last pepper & a squash from our garden)
1 tsp Salt
1 13.5 oz can of Coconut Sauce
1 packet (both inner envelopes) Peanut Sauce Mix
1 1/4 lbs chicken or beef thinly sliced

Soak noodles according to stir fry directions. Heat oil in wok over medium high heat. Add vegetables, salt and meat. Saute 3 minutes. Add coconut milk and peanut sauce. Mix. Bring to boil while stirring and boil 3 minutes. Add drained noodles and combine. Cook while stirring until noodles are firm but tender. Add peanuts for garnish.
