This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

Below is a compilation of weekly meals using the produce delivered by The Produce Box as well as some other recipes which have inspired me.

April 14-18

My box Friday contained:
  • Strawberries
  • Spinach
  • Red Potatoes
  • Peppers
  • Leeks
As I put away my box of goodies, I had already come up with my lunch for the day.  I sauteed some diced leeks along with 2 small diced red peppers.  I added the kale from last week's box and white wine.  I then added drained and rinsed white beans.  After heating for about 10 minutes I added diced up lefgt over steak and just before serving added diced tomato from last weeks box.  This was an awesome lunch and used upsome of last weeks produce as well as begun using this week's delivery!

Monday, April 14-  With soccer practice and meetings this evening, I am keeping it simple and having fajitas using some of the peppers from my box.

Tuesday, April 15-  Another quick meal is needed tonight.  Most likely I will make some sort of pasta meal.

Wednesday, April 16-  With the fresh spinach from my box I will try out a tweaked recipe I discovered on allrecipes.com.  I will serve this with carrots I froze from earlier boxes and couscous.

Spinach Stuffed Chicken Breasts WW 9pts
  • 1/2 (10 ounce) package fresh spinach leaves
  • 1/2 cup sour cream
  • 1/2 cup cream of chicken soup
  • 4 slices swiss cheese
  • 4 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness (soaked in buttermilk)
  • 1 pinch ground black pepper
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Melt 1 tablespoon of butter in a frying pan.  Add pressed garlic and saute.  Add spinach and saute until wilted.
  3. Mix soup and sour cream.
  4. Remove spinach from heat and stir in 1/2 the cream mixture until combined.
  5. Lay the chicken breasts out on a clean surface, lay a slice of swiss cheese onto breast and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach and secure with toothpicks.  Arrange in a shallow baking dish. 
  6. Pour remaining cream mixture over chicken.
  7. Bake uncovered for 35-45 minutes in the preheated oven. 

Thursday, April 17-  With the reurn of better weather I hope to grill steaks, camper potatoes served with green beans I forze from previous boxes.
 
Camper Red Potatoes
  • sliced red potatoes, dabs of butter, sliced onion or onion powder- Make foil packets and grill until browned and crispy about 30-40 minutes on low heat
Friday, April 18-  Since we plan to brunch Easter Sunday and will likley have less of an appetite for a big dinner, we are doing our Easter ham tonight.  Ham served with orange carrots and sweet potato casserole will be dinner tonight.  The carrots are boiled when near done I drain the water add butter and OJ and simmer.  Sometimes I add some brown sugar as well.

Sweet Potato Casserole 7 WW Points  
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans
1/4 cup margarine, melted
1/2 tsp ground cinnamon
4 medium sweet potatoes, peeled and halved
1/2 cup sugar
1 1/2 tsp vanilla extract
1 large egg white
1 (5 oz) can evaporated milk

1. Preheat oven 350 degrees
2. Combine first 5 ingredients in small bowl, stirring to form streusel. Set aside
3. Place potatoes in pot covered with water. Bring to boil, cover and simmer 30 min or until tender. Drain. Mash in large bowl.
4. Stir in 1 cup of streusel topping, sugar, vanilla, egg white and milk.
5. Spoon into 2-qt. casserole coated with cooking spray. Top with remaining streusel.
6. Bake for 45 min.
Serving: 3/4 cup

Tweaking Sausage, Spinach and Butternut Sauce Recipe for Dinner

I made the Pasta with Spicy Sausage, Baby Spinach and Creamy Butternut Sauce for dinner tonight.  I made a few alterations to the original recipe (changes highlighted below).  I thought this was a different way to have pasta and use a butternut squash.

Pasta with Spicy Sausage, Baby Spinach and Creamy Butternut Sauce

Servings: 5 • Size: 1 1/4 cups • Old Points: 7 pts • Points+: 9
Calories: 362 • Fat: 8 g • Carb: 55 g • Fiber: 5 g • Protein: 20 g • Sugar: 1 g
Sodium: 419 mg (without salt)

  • 11 oz (4 links) spicy chicken Italian sausage (I used 4 links of Italian Pork Sausage)
  • 1 lb butternut squash, peeled and diced
  • 1 tbsp light butter
  • 10 oz casarecce, or pasta of your choice 
  • 1/4 cup shallots, minced
  • 3 cloves garlic, minced
  • 2 cups baby spinach, roughly chopped
  • 2 tbsp fresh shaved parmesan cheese (didn't have any so omitted)
  • 4 sage leaves, sliced thin (sprinkle of ground sage)
  • about 1/3 cup of milk
  • kosher salt and freshly ground black pepper, to taste
Bring a large pot of salted water to a boil. Add butternut squash and cook until soft. (I will roast my squash, which is much easier)  Remove squash with a slotted spoon and place in a blender, blend until smooth. (I had roasted some butternuts the day before; after roasting I mashed the desired amount and refrigerated until tonight)

Add pasta to the boiling water and cook according to package directions for al dente, reserving at least 1 cup of the pasta water before draining.

Meanwhile, in a large deep non-stick skillet, sauté sausage over medium heat until browned, breaking up with a spoon as it cooks. When cooked through, set aside on a plate. (I baked the links once cooked I chopped up the sausage)

Reduce heat to medium-low and melt the butter, sauté the shallots and garlic until soft and golden, about 5 - 6 minutes. Add pureed butternut squash, season with with salt and fresh cracked pepper and add a little of the reserved pasta water (about 1 cup) to thin out the sauce to your liking. (I added regular tap water and some chicken bouliion; brought to a boil reduced heat added milk and simmered) Add baby spinach and stir in parmesan cheese and sage. Toss in cooked pasta and sausage and mix until well coated.

New Year Week Menu

As with most people I find myself inspired to eating healthier, becoming more active and shedding a few pounds.  I found over the last 2 months, that not preparing even the simplest of meal plans, that my family was eating more take out, I was making more trips to the grocery store and overall our diets were less nutritious.  Even if you don't plan elaborate recipes for dinners, just having an outline of what you will be cooking for the week is a lifesaver.  It eliminates numerous grocery store trips and decreases the easy excuse for take out.  With a New Year, I am striving to continue to blog my meal planning each week.  Which should allow me to follow my plans for a healthier and leaner family.

Wednesday, January 2 I will be preparing my Grandmother's Barley Soup, but using the leftover turkey from New Years.

Barley Soup
1/2-3/4 cup Barley
Lamb Shank with bone (can use other meat too)
Water (vegetable broth etc can be used as will- but reduce salt)
Celery
Carrots
Green Beans
Corn
Onion
Broth Dry Seasoning Mix
Salt and Pepper
  1.  Place lamb shank in pot and cover with water.  Cook down.
  2. Meanwhile cut/dice vegetables.
  3. Using some of the liquid from the lamb pot, add to large soup pot along with veggies, barley and meat. (liquid should be enough to completely cover contents)
  4. Add dry seasoning mix and salt and pepper.
  5. Bring to boil, then simmer for 1 1/2 hours.  (when reheating add more liquid to desired thickness)

Thursday, January 3- With the kids back at school and life back on schedules, I am going with a crock meal for dinner tonight.  I don't care for brown rice so I will be using white (I know not as healthy).  I am not sure if I will make the turkey sausage or actually use some Italian sausage instead.
Slow Cooker Red Beans and Rice
Serving Size: 1 cup | Calories: 170 | Previous Points: 3 | Points Plus: 4 | Total Fat: 3 g | Saturated Fats: 2 g | Trans Fats: 0 g | Cholesterol: 20 mg | Sodium: 150 mg | Carbohydrates: 22 g | Dietary fiber: 16 g | Sugars: 1 g | Protein: 18 g
  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 3/4 chopped red bell pepper
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • Kosher or sea salt to taste
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons freshly snipped thyme
  • 1 bay leaf
  • 2(15 ounce) cans dark red kidney beans
  • 3 cups chicken broth (low sodium, fat free)
  • SAUSAGE INGREDIENTS:
  • 1 lb lean ground turkey or chicken, 93% works well
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried sage
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 2 cups uncooked long grain brown rice
Place all the above sausage ingredients into a large mixing bowl and mix thoroughly until well blended. Make into small meatballs, about 1/2". Refrigerate while veggies are cooking.
In a large skillet, heat olive oil to medium-low, add onions, bell pepper and celery, sauté until tender, about 4 minutes. Add garlic and sauté one additional minute. Add sautéed onion, bell pepper, celery, garlic and remaining ingredients to the slow cooker, stir to combine. Add sausage and stir gently, cover and cook on low 6-8 hours. Recommend 4-6 quart slow cooker.
Cook rice according to the directions on package.
Remove the bay leaf and serve beans over a bed of brown rice.
Friday, January 4-  Between extracurricular events and a special dinner treat for one of my children, dinner is crazy tonight and there is no home cooking.


Saturday, January 5I am thinking of roasting a chicken for dinner tonight.  Weekends allow for more time consuming meals.  I again found a recipe to use with my leftover mashed potatoes from skinnytaste.com
Leftover Parmesan Mashed Potato Patties

  • 2 2/3 cups cold leftover skinny garlic mashed potatoes
  • 2 large egg whites or 1/4 cup egg beaters
  • 1/3 cup parmesan cheese, grated
  • 1/3 cup Italian seasoned breadcrumbs
  • cooking spray (I used Smart Balance)
Preheat the oven to 425°. Spray a baking sheet with cooking spray.

Fill a small bowl with egg whites, whisking well. Fill another bowl with the breadcrumbs and parmesan cheese, mix to combine.

Using a 1/3 cup measuring cup, form potatoes into 8 patties. Brush patties with egg whites (or you can use your hands to spread egg on), then dip into breadcrumb mixture. Place patties onto the baking sheet and spray the top with more cooking spray.

Bake for 15 minutes, or until the bottom becomes golden brown; flip and cook an additional 10-12 minutes, until golden on both sides.
Sunday, January 6- Another recipe I found on skinnytaste.com will comprise dinner tonight.  This was served with crumbled chicken sausage.  I am not sure what meat I will add to my dish.

Shrimp Creole

Gina's Skinny Recipes
Servings: 4 • Serving Size: 1/4th • Old Points: 4 pts • Points+: 5 pts

  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup celery, chopped
  • 2 cloves of garlic, minced
  • 14-ounce can of diced tomatoes
  • 8 oz tomato sauce
  • 1/4 teaspoon of cayenne pepper
  • 1/4 tsp Cajun Seasoning such as Slap Your Mama (more or less to taste)
  • 1 bay leaf
  • 1 tbsp of all purpose flour (1 tsp corn starch for gluten-free)
  • 2 tbsp water
  • 1 lb of large shrimp, peeled and deveined
  • 2 tsp Worcestershire sauce
  • 2 tsp hot sauce, to taste
  • 1 medium scallion, sliced
  • 2 tbsp fresh parsley, chopped
  • salt to taste
In a large skillet heat the olive oil over medium heat. Add the chopped onion, green bell pepper, garlic and celery and saute until tender. Add tomatoes and tomato sauce, cayenne pepper, cajun spice, bay leaf and bring to a boil. Cover and reduce heat to low and simmer 20-30 minutes.

Make a slurry of the flour and water and stir into the tomato mixture. Continue cooking for another 5 minutes. Lightly season the shrimp with the Cajun seasoning and add immediately to the tomato mixture. Add Worcestershire sauce and hot sauce; stir together. Cook for another 5 to 6 minutes, or until shrimp is opaque and cooked through, adjust salt if needed.

Add chopped green onion and parsley and serve. 
 
Tuesday, January 8-  Most likely this will be leftover night.  However, if that doesn't happen I will probably make my last minute go to meal, of chicken fajitas.

March 1- March 6

I wasn't thrilled with the pork meal I made, don't think that we'll do that one again.  The potato salad was a different and nice change from the mayo-ladden salads. I still haven't made the sweet potato burritos.  Maybe sometime soon I will give it another try.
Thursday, March 1- Grilling Hamburgers and hotdogs tonight and serving it with a lighter version of macaroni salad.

Lightened Up Macaroni Salad
Servings: 7 Size: 3/4 cup Points: 3 pts
  • 6 oz dry elbow macaroni
  • 1/4 cup light mayonnaise
  • 2 tomatoes, diced
  • 1/2 cup chopped bell pepper
  • 1/4 cup red onion, diced
  • 1 tbsp white vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp oregano
  • dash of garlic powder (I am using Garlic Garlic)
  • salt and fresh pepper to taste
Cook pasta in salted water according to package directions. While pasta is cooking, combine all ingredients and mix well. When pasta is done (do not overcook) rinse under cold water. Combine pasta with other ingredients and season with salt and pepper. Chill before serving.

Friday, March 2-  I have made a grilled tuna dish that my husband loves.  If tuna steaks aren't too expensive that will be tonight's meal.

Grilled Teriyaki Tuna Wraps 7 Pts (w/ Ole Tortilla Wrappers)

  • 3 8 ounces tuna steaks, 1-inch thick*
  • 1/3 cup soy sauce
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons packed brown sugar
  • 1 1/2 teaspoons finely shredded fresh ginger
  • 8 10 inches flour tortillas
  • 1 tablespoon cooking oil
  • 3/4 cup fat-free dairy sour cream
  • 3/4 cup bottled honey-mustard salad dressing
  • 2 cups lightly packed arugula leaves
  • 1 large red onion, sliced (1 cup)
  • 1 medium tomato, chopped (1 cup)
Directions
1. Place fish in a plastic bag set in a shallow dish. In a small bowl stir together soy sauce, garlic, sugar, and ginger; pour over fish. Seal bag. Marinate in refrigerator 1 to 2 hours; turn bag occasionally. Drain; discard marinade. For charcoal grill, grill fish on greased rack of uncovered grill directly over medium coals for 8 to 12 minutes or until fish flakes easily (tuna may be slightly pink in center), turning once. (For gas grill, preheat grill. Reduce heat to medium. Place fish on greased grill rack over heat. Cover; grill as above.) Cut tuna into 1/2-inch chunks. Brush both sides of tortillas lightly with cooking oil and place 2 at a time on grill rack for 30 to 45 seconds or just until warmed.
2. In a medium bowl stir together sour cream and salad dressing. For each wrap, spread 3 tablespoons of the sour cream mixture on a tortilla. Place some of the tuna near an edge of tortilla. Top with some of the arugula, onion, and tomato. Fold edge over filling; fold in the sides and roll up. Makes 8 wraps.
From the Test Kitchen
  • Note *To substitute one 1-1/2-pound beef flank steak, marinate as above. Grill directly over medium coals 17 to 21 minutes or until medium (160 degree F); turn once. Serve as above.

Saturday, March 3-  I am thinking a trip to the Meat House is in order for their delicious marinated steak tips.  We'll grill the steaks along with some red potatoes and if asparagus is on sale that as well! WW Pts: Steak 2oz = 2.5Pts; Red Poatoes 8oz = 3Pts.

Sunday, March 4- I am a little hesitant that this will be enough to both stuff and cover the chicken but that is an easy fix if necessary.   I stumbled upon this recipe on skinnytaste.com

Chicken Rollatini with Spinach alla Parmigiana
Servings: 8 • Serving Size: 1 stuffed breast • Points: 4 pts
  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese, divided
  • 6 tablespoons egg whites or egg beaters
  • 5 oz frozen spinach, squeezed dry of any liquid
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella
  • olive oil non-stick spray
  • 1 cup your favorite marinara sauce
  • salt and pepper to taste
Wash and dry cutlets, season with salt and pepper.  Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.

Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.

Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese.

Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.

Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with olive oil.

Bake 25 minutes. Remove from oven, top with sauce then cheese.  Bake until cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.

Monday, March 5I have made this meal many times before, BBQ Pork Sandwiches.  I am thinking Southern Green Beans would be a good side and any left over macaroni salad from early.  I will use my Pampered Chef Deep Covered Baker to microwave some boneless pork strips sprinkled with some BBQ seasoning. (Rolls 2Pts.; Pork 2oz = 3Pts; 1Pt Sauce)
  • Brush with oil and rub seasoning onto pork. Place into baker, cover and microwave on HIGH for 6-10 minutes or until internal temperature reaches 150. Remove from microwave, keep it covered for 10 minutes allowing the temperature to rise to 160. Top with Barbecue Sauce and server as main dish, or shred meat and use in sandwiches.
Barbecue Sauce

1 cup ketchup
2 Tbsp Barbecue Rub
¼ cup brown sugar
2 tsp cider or white vinegar
  • Combine ingredients and bring to boil, stir occasionally.
Tuesday, March 6-  I have made baked ziti for years but stumbled upon this lighter version on Skinnytaste.com  I'll give it a shot and serve it with a green salad and some sliced bread.

Low Fat Baked Ziti with Spinach
 Servings: 8 • Serving Size: approx 2 cups Points: 6 pts
Calories: 331.9 Fat: 7.1 g Protein: 17.5 g Carb: 54.7 g Fiber: 7.8 g
  • 1 lb high fiber ziti
  • 28 oz crushed tomatoes
  • 1 tsp olive oil
  • 3 cloves garlic,minced
  • 1/2 onion diced
  • 10 oz frozen spinach, thawed
  • 1 tsp oregano
  • 2 tbsp chopped fresh basil
  • salt and fresh pepper to taste
  • 8 oz fat-free ricotta
  • 1/4 cup Parmesan
  • 2 cups (8 oz) part skim mozzarella
  • Spray olive oil
Preheat oven to 375°. Spray a 9x13-inch baking pan with oil spray.

In a large pot of salted water, cook pasta according to instructions until al dente. Drain and return to pot.

Meanwhile, in a medium saucepan, add olive oil and sauté onions and garlic. Add chopped spinach, salt pepper and chopped tomatoes. Season with basil, oregano, salt and pepper.

Add sauce to the pasta and combine the ziti. Add half of the mozzarella, all the Parmesan cheese and ricotta. Mix well then transfer to the baking pan.

Pour the pasta mixture into the prepared pan and spread evenly. Top with the remaining mozzarella.

Bake for 30 minutes, or until mozzarella is melted and the edges are lightly browned.

February 16- February 22

I made the pot roast but wasn't overly impressed.  I think there are better recipes still out there for me to discover.   Of course the Feijao and rice was excellent and the sausage dish last week was very tasty.

Thursday, February 16-  Well the chili got held to tonight.  WW Pts: 3- 1 cup

Friday, February 17-  We have decided to treat our family with dinner out on the town tonight.

Saturday, February 18- This recipe taken from Woman's Day, originally called for broccoli.  Not a big broccoli fan, I substituted it with baby spinach.  Below is my altered recipe.
Bow Ties with White Beans and Spinach WW Pts: 5 per cup
  • 1/2 box bow-tie pasta
  • 1 tablespoon(s) olive oil
  • 3 cups baby spinach
  • 2 clove(s) garlic, finely chopped
  • 1 1/2 cup(s) low-sodium chicken broth
  • 1 can(s) (15-oz) cannellini or other white beans, rinsed & drained
  • 1 teaspoon(s) grated lemon zest
  • 1 tablespoon(s) fresh lemon juice
  • 1/3 cup(s) grated Parmesan cheese
Directions
  1. Cook pasta according to package directions. Drain the pasta and return it to the pot.
  2. Meanwhile, heat the oil in a large skillet over medium heat.  Add the garlic and cook, tossing, for 1 minute.
  3. Add the broth and bring to a simmer.  Add spinach, stirring occasionally, until the spinach is just wilted. Add the beans, lemon zest and juice and cook until heated through, 2 minutes.  For a little heat, add a sprinkle of crushed red pepper flakes.
  4. Toss the pasta with the spinach and bean mixture and serve with the cheese.
Sunday, February 19-  My husband is been great at throwing together delicious stir fry meals.  Tonight, I hope he'll whip up yet another fantastic Asian Stir Fry.

Monday, February 20-  I found this recipe at Woman's Day website.  Again I have altered the original recipe, I am hoping my changes pay off and all works out well!
Pork Chops with Carrots and Oranges 
WW Pts: 2 for carrots; 2oz Pork 3pts.
  • 2 teaspoon(s) honey
  • 1/2 teaspoon(s) ground cumin
  • 2 tablespoon(s) olive oil
  • Kosher salt and pepper
  • 1 1/2 pound(s) medium carrots, cut into 2-in. pieces (halved lengthwise if large)
  • 1  navel orange, cut into wedges
  • 1 teaspoon dill (optional)
  • 4  1-in.-thick pork chops, trimmed (about 1¼ lb total)
  1. Heat oven to 400°F. In a small bowl, whisk together the honey, cumin, 1 Tbsp oil, ½ tsp salt and ¼ tsp pepper.
  2. Toss the carrots with the honey mixture.  Season pork chops with salt and pepper (and dill is using).  
  3. Arrange pork and carrots in deep dish covered baker. Nestle the oranges among the carrots, cover and roast until the carrots are tender and pork is cooked through, 30 to 45 minutes.
Tuesday, February 21-  Madi Gras!  We are attending a friend's party this evening.

Wednesday, February 22- I'm not sure if my husband will be home tonight for dinner.  If not, it will either be pasta or fajitas.  If he will be joining us, I am contemplating making the below recipe found at Woman's Day.
Sweet Potato and Black Bean Burritos  
WW Pts: 7 for 2 burritos using Fiber Ole tortillas & 2% Mexican Cheese 28g
  • 1 tablespoon(s) olive oil
  • 1 large sweet potato, peeled and cut into 1/2-in. pieces
  • 1 medium red onion, half chopped and half thinly sliced
  • Kosher salt and pepper
  • 1 15 1/2 ounce(s) can black beans, rinsed
  • 1 tablespoon(s) chopped chipotle peppers in adobo
  • 1 small bunch spinach, thick stems discarded, leaves coarsely chopped
  • 6- ounce(s) Monterey Jack cheese, coarsely grated
  • 4 large flour tortillas
  1. Heat 1 Tbsp of the oil in a large skillet over medium heat. Add the sweet potato, chopped onion and 1/2 tsp salt and cook, covered, stirring occasionally, until tender, 10 to 12 minutes.
  2. Add the beans and chipotles and cook, stirring occasionally, for 2 minutes. Add the spinach and cook, tossing, until it begins to wilt, 1 to 2 minutes. Divide the cheese and potato-bean mixture among the tortillas (about 1 cup each) and roll up to form burritos. Wipe out the skillet and heat over medium heat. Cook the burritos (seam-side down first) until golden brown, 2 to 3 minutes per side.

Thanksgiving Week Menu


Monday, November 21-  Since I had about half the spinach from my Box leftover I decided to make pork chops and Southern Living magazine's recipe for Buttermilk Mashed Potatoes and Creamy Spinach.


Buttermilk Mashed Potatoes Recipe
4lbs potatoes
1 1/4 cups buttermilk
1/2 milk
1/4 butter
salt and pepper
5 oz spinach
5 1/2 oz buttery garlic and herb spreadable cheese
1/4 chopped pecans
  1. Peel 4 lb. baking potatoes; cut into 2-inch pieces. 
  2. Bring potatoes, 2 tsp. salt, and water to cover to a boil in a large Dutch oven over medium-high heat; boil 20 minutes or until tender. 
  3. Drain. Return potatoes to Dutch oven, reduce heat to low, and cook, stirring occasionally, 3 to 5 minutes or until potatoes are dry.
  4. Mash potatoes with a potato masher to desired consistency. 
  5. Stir in 1 1/4 cup warm buttermilk, 1/2 cup warm milk, 1/4 cup melted butter, 1/2 tsp. pepper, and 1 tsp. salt, stirring just until blended. 
  6. Mix into potatoes,1 (5-oz.) package fresh baby spinach, cooked until wilted; 1 (5 1/2-oz.) package buttery garlic-and-herb spreadable cheese; and 1/4 cup chopped toasted pecans.  
  7. Spoon the mixture into a lightly greased 2 1/2-qt. baking dish. Bake at 350° for 35 minutes.   Makes: 6 to 8 servings

Tuesday, November 22-  As of right now I still plan on tortellini but I am opting out with a simple meal of tomato sauce, a side salad and a loaf of bread.

Wednesday, November 23-  I will be baking a pumpkin pie and from William Sonoma their Deep Dish Apple Bourbon Streusel Pie for Thanksgiving dessert.  With the baking, cleaning and prepping for tomorrow, take out is in order tonight!

Dish Apple Bourbon Streusel Pie

  • For the filling:
  • 3 lb. Granny Smith apples, peeled, cored and cut into slices 1/4 inch thick
  • 3 lb. Pink Lady apples, peeled, cored and cut into slices 1/4 inch thick
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. freshly grated nutmeg
  • 1/4 cup cornstarch
  • 3 Tbs. bourbon
  • 2 Tbs. vanilla extract
  • For the streusel:
  • 2/3 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 Tbs. ground cinnamon
  • 1/2 tsp. salt
  • 2/3 cup roughly chopped pecans
  • 7 Tbs. cold unsalted butter, diced

Directions:

On a lightly floured work surface, roll out the dough into a 20-by-14-inch rectangle about 1/8 inch thick. Fold the dough in half and transfer to a 13-by-9-inch baking dish. Unfold the dough and press into the bottom and sides of the dish. Trim the edges, leaving a 1/2-inch overhang, and fold in the excess dough so it extends just beyond the rim of the dish. Refrigerate the pie shell for 30 minutes.

Position a rack in the lower third of an oven and preheat to 375°F.

Meanwhile, make the filling: In a large bowl, stir together the apples, brown sugar, granulated sugar, cinnamon, salt, nutmeg, cornstarch, bourbon and vanilla until well combined.

To make the streusel, in a bowl, stir together the flour, granulated sugar, brown sugar, cinnamon, salt and pecans. Add the butter and work it in with your fingers, pinching to form pea-size pieces.

Pour the apple mixture into the pie shell and sprinkle the streusel on top. Decorate the pie as desired with decorative cutouts. Bake until the streusel is golden brown and the apples are tender, about 1 hour and 45 minutes; if the top of the pie has browned after 1 hour, tent it loosely with aluminum foil. Transfer the pie to a wire rack and let cool for at least 2 hours before serving. Serves 12 to 14.


Thursday, November 24- Thanksgiving!  Of course I will be baking an extra large turkey stuffed with my mother's stuffing recipe.  I will also be making my sweet potato casserole and my butternut squash recipes using the vegetables received in earlier boxes.  I will also boil up some of the frozen green beans I received from another Box.  There will also be cranberry sauce, gravy, hot rolls and wine.  And for dessert the pies I baked yesterday.

Butternut Squash Casserole- from Williams-Sonoma
Casserole:
4 cups butternut squash puree
1/2 cup sugar
1 cup milk
1 tsp vanilla
1 tsp orange extract
1/4 tsp salt
2 Tbsp all-purpose flour
3 large eggs
4 Tbsp unsalted butter, melted
Topping:
1 cup vanilla wafers, crushed
1/2 cup unsalted butter, melted
1 cup brown sugar

1. Preheat oven to 425 F. Lightly grease a casserole dish (4 - 6 cup capacity).
2. Combine squash puree, sugar, milk, vanilla, orange extract, salt, flour, eggs and melted butter. Pour into the prepared casserole dish. Bake for 45 minutes or until set.
3. Meanwhile, make the topping. In a medium bowl, combine crushed vanilla wafers, melted butter and the brown sugar. Sprinkle over top of the cooked casserole and return to the oven to brown for an additional 10-15 minutes. Serve warm.
Sweet Potato Casserole 7 WW Points  
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans
1/4 cup margarine, melted
1/2 tsp ground cinnamon
4 medium sweet potatoes, peeled and halved
1/2 cup sugar
1 1/2 tsp vanilla extract
1 large egg white
1 (5 oz) can evaporated milk

1. Preheat oven 350 degrees
2. Combine first 5 ingredients in small bowl, stirring to form streusel. Set aside
3. Place potatoes in pot covered with water. Bring to boil, cover and simmer 30 min or until tender. Drain. Mash in large bowl.
4. Stir in 1 cup of streusel topping, sugar, vanilla, egg white and milk.
5. Spoon into 2-qt. casserole coated with cooking spray. Top with remaining streusel.
6. Bake for 45 min.
Serving: 3/4 cup

Friday, November 25-  I not quite sure what culinary masterpiece I will dish up tonight just yet.  With all of the feasting from the night before, I may pass the baton over to my husband this evening.

Saturday, November 26- Thanksgiving leftovers.  A mom in my daughter's class shared a Thanksgiving specialty which graces her dining table every year.  It sounded so good and a great way to use up Thanksgiving leftovers, so I am giving it a shot. 

Fried Stuffing Patties

Leftover Stuffing
Leftover Chopped Turkey
Chicken Broth
Butter/oil

Take leftover stuffing add chicken broth generously and chopped turkey and mix.  Form thin patties (make sure they are very moist) and fry in butter or vegetable oil til crisp and heated through.  Serve with heated gravy on top if desired.

I'll serve them along with any leftover cranberry sauce, sweet potato casserole and butternut squash casserole.

Last Box this Season

Sadly, this was our last Produce Box delivery for the season until next Spring.  After this week, I will have to conjure up my weekly menus without the aide of my Box for inspiration.
This week we recieved:
  • Green Beans
  • Romaine Lettuce
  • Spinach
  • 2 Broccili
  • Butternut Squash
  • 7 Granny Smith Apples
  • 5 medium Sweet Poatoes
The sweet potatoes and the butternut squash )along with another butternut from an earlier delivery) will be saved for our Thanksgiving Feast.  I will most likely blanch and freeze the green beans for future use.

Wednesday, November 16-  With the fresh spinach from my box I will try out a tweaked recipe I discovered on allrecipes.com.  I will serve this with mashed potatoes.
Spinach Stuffed Chicken Breasts WW 9pts

  • 1/2 (10 ounce) package fresh spinach leaves
  • 1/2 cup sour cream
  • 1/2 cup cream of chicken soup
  • 4 slices swiss cheese
  • 4 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness (soaked in buttermilk)
  • 1 pinch ground black pepper
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Melt 1 tablespoon of butter in a frying pan.  Add pressed garlic and saute.  Add spinach and saute until wilted.
  3. Mix soup and sour cream.
  4. Remove spinach from heat and stir in 1/2 the cream mixture until combined.
  5. Lay the chicken breasts out on a clean surface, lay a slice of swiss cheese onto breast and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach and secure with toothpicks.  Arrange in a shallow baking dish. 
  6. Pour remaining cream mixture over chicken.
  7. Bake uncovered for 35-45 minutes in the preheated oven. 
Thursday, November 17- We will be doing pizza and a movie at the Halle Cultural Arts Center tonight.
Friday, November 18-  I made Lettuce Wraps last time we had a head of romaine lettuce so I am thinking Asian Lettuce Wraps tonight.
Asian Lettuce Wraps WW 9 pts (2 wraps with 2 small scoop beef)
  • 16 lettuce leaves
  • 1 pound lean ground beef
  • 1 tablespoon cooking oil
  • 1 large onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoons ground ginger
  • 1 tablespoon rice wine vinegar
  • Asian chile pepper sauce (optional)
  • 1/2 cup chopped peanuts
  • 1 bunch green onions, chopped
  • 2 teaspoons Asian (dark) sesame oil
Sauce
  • 1 tsp sesame oil
  • 2 T soy
  • 2 T rice vinegar
  • 1 T chile paste
Mix ingredients and spoon desired amount over wrap before rolling.

Directions

  1. Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  2. In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped peanuts, green onions, sesame oil, and cooked beef; continue cooking until the onions just begin to wilt, about 2 minutes.
  3. Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Add desired amount of sauce. Wrap the lettuce around the meat like a burrito, and enjoy!

 Saturday, November 19-  I think I will roast a chicken tonight.  I'll season it with garlic cloves, oregano and thyme.  I'll serve green beans from my Box and perhaps roasted or baked potatoes.
Sunday, November 20-  I think grilled hamburgers along with homemade macaroni salad and sliced apples will round out this evening's meal.
Monday, November 21- Pork Chops and my favorite, Potato Pancakes served with applesauce will be tonight's meal. (I'll post the pancake recipe later)
Tuesday, November 22- I am contemplating making again from an earlier summer post,  Chicken and Tortellini Salad which I found in my June issue of Southern Living.  If not this recipe I may just make tortellini with vodka sauce.
Chicken and Tortellini Salad
  • 2 (9-oz.) packages refrigerated cheese-filled tortellini
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves
  • 1 teaspoon Worcestershire sauce
  • 2 cups chopped cooked chicken
  • 1 cup frozen sweet peas, thawed
  • 1/2 cup thinly sliced green onions
  • 1/2 cup chopped fresh flat-leaf parsley
  • Salt and pepper to taste
 1. Prepare tortellini according to package directions.
2. Process olive oil and next 4 ingredients in a blender until smooth. Toss olive oil mixture with tortellini, chicken, and next 3 ingredients. Add salt and pepper to taste.

Baslsamic Chicken with White Beans and Spinach

A slight change in menu plans and I will be trying this recipe for the first time.  The original recipe calls for Campbell's® Condensed Golden Mushroom Soup but I don't have that on hand.  Instead I will use chicken stock.  I will also add sliced scallions from my Produce Box to the garlic saute.   I am debating to serve the chicken and beans over a fresh bed of spinach (from my Box) with a drizzle of balsamic vinaigrette or to actually the add the spinach to the dish as directed.  Decisions, decisions!

 Balsamic Chicken with White Beans and Spinach  7 WW Pts.

  • 2 tablespoons olive oil
  • 4 (4 ounce) skinless, boneless chicken breast halves
  • 3 cloves garlic, minced
  • 3 scallions sliced
  • 1/3 cup balsamic vinegar
  • 10.75 ounce Chicken Stock
  • 1 (15 ounce) can white kidney beans (cannellini), rinsed and drained
  • 1 (7 ounce) bag fresh baby spinach

Directions

  1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken from the skillet.
  2. Reduce the heat to medium. Add the garlic and scallions to the skillet and cook and stir for 1 minute. Stir in the vinegar and cook, scraping up the browned bits from the bottom of the pan.
  3. Stir the stock and beans in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to medium. Stir in the spinach. Cover and cook until the chicken is cooked through and the spinach is wilted.
