This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

November 1-November 6

Friday, November 1-  Apple themed dinner tonight.  I am using my older apples from a previous box to make oven baked apples and pork chops served along side apple stuffed acorn squash and fresh green beans both from my box.
Apple Stuffed Acorn Squash
  • 2-3 apples peeled, cored and large diced
  • Acorn squash cut in half seeds removed
  • 2 tablespoons brown sugar
  • 1-2 tablespoons butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Mix spice mixture together toss into diced apples.  Scoop half of apple mixture into each half of the acorn squash.  Place half of butter on top of each acorn half.  Bake in a 350 degree oven for 1 hour.  In baking dish pour a water onto bottom of pan to cover dish.

Apple Pork Chop Bake
  • 4 pork chops seasoned with salt and pepper
  • 3 apples peeled, cored and diced
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2 tablespoons Melted butter
  • 2 tablespoons brown sugar
Arrange seasoned chops in cover baking dish.  Combine spices and brown sugar, add apples and butter, toss to coat.  Pour apple mixture evenly over chops.  Cover and bake 20-30 minutes in a 350 degree oven. Last 10 minutes remove lid.

Saturday, November 2-   Tonight we are treating ourselves to dinner out or at least take out.

Sunday, November 3- After hiking today we had a late lunch so dinner will be leftovers.
Monday, November 4-  I'd like to bake a full herbed seasoned chicken tonight along with my butternut squash casserole and corn pudding using the corn, onion, and squash from my box.
Butternut Squash Casserole- from Williams-Sonoma
Casserole:
4 cups butternut squash puree
1/2 cup sugar
1 cup milk
1 tsp vanilla
1 tsp orange extract
1/4 tsp salt
2 Tbsp all-purpose flour
3 large eggs
4 Tbsp unsalted butter, melted

Topping:
1 cup vanilla wafers, crushed
1/2 cup unsalted butter, melted
1 cup brown sugar
1. Preheat oven to 425 F. Lightly grease a casserole dish (4 - 6 cup capacity).
2. Combine squash puree, sugar, milk, vanilla, orange extract, salt, flour, eggs and melted butter. Pour into the prepared casserole dish. Bake for 45 minutes or until set.
3. Meanwhile, make the topping. In a medium bowl, combine crushed vanilla wafers, melted butter and the brown sugar. Sprinkle over top of the cooked casserole and return to the oven to brown for an additional 10-15 minutes. Serve warm.

Corn Pudding (recipe from Just Right Menus)
1 can (14 3/4 oz) corn, drained - - or 1 1/2 to 2 cups of fresh corn, 3-4 ears' worth
2 eggs, lightly beaten
1 c. evaporated milk
1/4 c. sugar
2 1/2 TB flour
2 TB melted butter
salt to taste
  1. Preheat oven to 350°. 
  2. Combine all ingredients together. 
  3. Pour into a greased pan/dish (about the size of a 10" round dish) 
  4. Bake 350° for 50 - 60 minutes, or until brown on top and sides. If you're not sure if it's done, insert the tip of a butterknife into the center. If you can move the pudding over & see the bottom of the pan without the pudding running back over, it's done.
Tuesday, November 5-  I have a great number of peppers from my box along with a hearty amount of corn on the cob.  So, I will either make sausage and peppers over spaghetti or stuffed peppers for the grown ups and Mac n' Cheese for the girls along with fresh corn on the cob will make up tonight's meal.
Stuffed Peppers  WW Pts: 7
  • 4 large peppers (8 banana peppers)
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1 (14 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 1/4 teaspoons salt, divided
  • 1/4 teaspoon ground black pepper, divided
  • 1 egg
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • 1 pound Italian sausage
  • 3/4 cups bread crumbs
  1. Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
  2. Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 3/4 teaspoon salt and 1/8 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
  3. Meanwhile, in a large mixing bowl, combine egg, 1/4 teaspoon salt, 1/8 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in sausage, bread crumbs and 1 cup of the tomato sauce mixture.
  4. Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
  5. Bake uncovered in preheated oven for 1 hour. (optional- last 15 minutes sprinkle shredded mozzarella cheese)

Wednesday, November 6-  Scout night so it's fajitas with any leftover peppers and onion from my box along with any potato and macaroni salad we picked up over the weekend.

October 14-18

Monday, October 14-  A simple healthy meal for dinner tonight.  I'll use the fresh corn for the sweet poatoes and give my kids corn on the cob with their meals.  I'll be adding precooked chicken on top of the potatoes and along with my kids meals. (They aren't big Southwest sweet potato fans)


Stuffed Sweet Potatoes Southwestern Style
Yields: 4 | Serving Size: 1 potato | Calories: 215 | Previous Points: 4 | Points Plus: 5 | Total Fat: 2 g | Saturated Fat: 1 g | Trans Fat: 0 g | Cholesterol: 0 mg | Sodium: 15 mg | Carbohydrates: 43 g | Dietary Fiber: 8 g | Sugars: 3.5 g | Protein: 8.5 g |
  • 4 small sweet potatoes
  • 1 teaspoon olive oil
  • 1 small red onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 cup canned, chopped tomatoes with juices
  • 1/2 cup cooked black beans
  • 1/2 cup frozen corn kernels
  • 2 tablespoons fresh chopped cilantro
  • Sea salt and freshly ground pepper, to taste
Preheat oven to 400 degrees F.
Put the sweet potatoes on baking sheet and bake for 30 minutes. Remove from oven, prick a few times with a fork and put back in the oven for 30 more minutes or until tender.
While the sweet potatoes are baking, heat a medium skillet over medium heat. Add the olive oil and the onions. Cook for 2 minutes, until the onions are softened, but not translucent. Add the garlic and cook for 30 more seconds, and then add the cumin, chili powder, and a pinch of salt. Add the tomatoes, beans and corn. Stir until combined; add the cilantro and season with salt and pepper to taste.
To serve, remove the sweet potatoes from the oven, slice down the middle and season lightly with salt. Divide the filling between the potatoes and serve.

Tuesday, October 15-Girl Scout meeting tonght which means super quick and easy!  I'll probably make tortellini with a side salad from my produce box and a sliced bread.

Wednesday, October 16-  Another scout meeting, so another simple meal.  I'll fry up some of the pepper from my box along with onions to eat over fajitas.

Thursday, October 17-  If everyone is home for dinner, I'll make a pork tenderloin along with fresh green beans from my box and rice.

Friday, October 18-  Not sure yet where our family will be and what everyone will be up too.  I'll need to wait and see....

Ingredients

July 23-July 31


I never made a menu for last week into this week.  Therefore, this post is an extra long menu planner!

Our Box this week will consist of:
  • 2 qt Peaches
  • Sweet Corn (4)
  • Irish potatoes (red or white)
  • Assorted Eggplant
  • Cubanelle and Poblano Mix Peppers
  • Grape Tomatoes (1 Pt.)
I never made the Peach Muffins.  Instead we made peach topping for crepes and pancakes over the weekend.  With a double batch of peaches this week, I am sure I will make this recipe.
Peach Cobbler Mini Muffins
  • 1 1/2 cups all-purpose flour
  • 1/2 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup white sugar
  • 1-2 cups peeled, pitted, and chopped peaches
1. Preheat oven to 400° F. Line the mini muffin tin with mini muffin papers.

2. In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups

3. Bake 17-20 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely. Makes approximately 24 mini muffins. **I plan to make regular sized muffins**
Monday, July 23-  Dance/Golf nights always mean eating separately and usually take out.
Tuesday, July 24-  Looking for inspiration and something different I came across tonight's recipe on Tastefully Simple's website.  The girls will dine on quesidillas.
Simply Southwest Fish Tacos

2-3 tsp. Simply Southwest Seasoning & Rub
1 lb. white fish fillets, such as cod, tilapia or orange roughy
6 hard corn taco shells
Shredded lettuce
Diced tomatoes
Shredded Cheddar cheese
Salsa
Sour cream

Preheat oven to 350°. Sprinkle Simply Southwest Seasoning & Rub to taste on fish fillets; place fillets on lightly greased baking sheet. Bake for 10-15 minutes or until fish flakes easily. Break fish into bite-size pieces, place in taco shells. Top fish with remaining ingredients. Makes 6 servings.
Wednesday, July 25-  School Function this evening.  The kids are going out with my husband while I go to school.

Thursday, July 26-  It's just us girls tonight.  Turkey meatballs and spaghetti with a loaf of bread will be tonight's meal.

Friday, July 27-  I am not cooking tonight- Birthday Celebration in order!

Saturday, July 28I will use the corn from my Box to make this dish.  Not sure if I can use the potatoes, will need to research that.  I will grill a steak to serve along side the potato salad.
Corn and Potato Salad (BHG August 2012)
  • 3 ears corn
  • 2 pounds small waxy potatoes, such as Yukon Gold or Red Bliss
  • Kosher salt
  • 1 medium red onion
  • 3 tablespoons cider vinegar
  • Black pepper
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup finely chopped fresh basil
  • 1/2 cup finely chopped cilantro

1. Shuck the corn, then place the ears in a large pot with the potatoes. Add water and 1 tablespoon salt to cover by 2 inches. Bring water to a boiling. Boil, covered, for 2 to 4 minutes, until corn is tender. Remove corn. Continue to boil the potatoes 15 to 20 minutes until very tender.
2. While the potatoes cook, finely chop the onion. In a large bowl combine chopped onion, vinegar, salt, and the 1/2 teaspoon pepper. Cut the kernels from ears of corn, then add onion to bowl.
3. When potatoes are very tender, drain in a colander. Cool enough to handle. Place potatoes on a board, then press with hands or potato masher to break up. Add potatoes to the onion and corn. Add the oil; gently stir to combine. Let salad come to room temperature, then add herbs and season with salt and pepper to taste. If desired, cover and refrigerate up to 24 hours. Let stand at room temperature for at least 1 hour before serving. If needed, toss with additional olive oil and vinegar before serving.

July 11- July 17

This week our Box consisted of:
  • 1qt. Peaches

  • and an add on of Bibb Lettuce
The peaches and blueberries are always great snacks on hand.  I may even try making Peach Muffins.

Wednesday, July 11-  Using the Bibb Lettuce I will make Asian Lettuce Wraps for dinner tonight.  Since I believe the kids will not particularly care for this meal I'll make Ramen Noodles and green beans from my box for them.
Asian Lettuce Wraps WW 9 pts (2 wraps with 2 small scoop beef)
  • 16 lettuce leaves
  • 1 pound lean ground beef
  • 1 tablespoon cooking oil
  • 1 large onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoons ground ginger
  • 1 tablespoon rice wine vinegar
  • Asian chile pepper sauce (optional)
  • 1/2 cup chopped peanuts
  • 1 bunch green onions, chopped
  • 2 teaspoons Asian (dark) sesame oil
Sauce
  • 1 tsp sesame oil
  • 2 T soy
  • 2 T rice vinegar
  • 1 T chile paste
Mix ingredients and spoon desired amount over wrap before rolling.

Directions

  1. Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  2. In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped peanuts, green onions, sesame oil, and cooked beef; continue cooking until the onions just begin to wilt, about 2 minutes.
  3. Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Add desired amount of sauce. Wrap the lettuce around the meat like a burrito, and enjoy!

Thursday, July 12 Although it's just the girls tonight, I plan to cook up some greens beans along with Southern Fried Chicken and gravy.  This recipe reprinted from Southern Living, orginally calls for cube steaks but I substitute boneless chicken breasts instead.  I will be blanching the remaining green beans to freeze for a later date.


Southern Fried Chicken and Gravy
  • 2 1/4 teaspoons salt, divided
  • 1 3/4 teaspoons black pepper, divided
  • 4 (4-ounce) cube steaks (I use chicken breasts)
  • 38 saltine crackers (1 sleeve), crushed (in a pinch I have substituted bread crumbs)
  • 1 1/4 cups all-purpose flour, divided
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon baking powder
  • 4 3/4 cups milk, divided 
  • 2 large eggs 
  • 3 1/2 cups peanut oil
  • Garnish: chopped fresh parsley

Preparation

  1. Sprinkle 1/4 teaspoon salt and 1/4 teaspoon black pepper evenly over steaks. Combine cracker crumbs, 1 cup flour, 1 teaspoon salt, 1/2 teaspoon black pepper, red pepper, and baking powder. Whisk together 3/4 cup milk and eggs. Dredge steaks in cracker mixture; dip in milk mixture, and dredge again in cracker mixture.
  2. Pour oil into a 12-inch skillet; heat to 360°. (Do not use a nonstick skillet.) Fry steaks 3 to 4 minutes. Turn and fry 2 to 3 minutes or until golden brown. Remove steaks to a wire rack in a jelly-roll pan. Keep steaks warm in a 225° oven. Carefully drain hot oil, reserving cooked bits and 1 tablespoon drippings in skillet.
  3. Whisk together remaining 4 cups milk, 1/4 cup flour, remaining 1 teaspoon salt, and remaining 1 teaspoon black pepper. Add milk mixture to reserved drippings in skillet; cook, whisking constantly, over medium-high heat 10 to 12 minutes or until thickened. Serve gravy with steaks. Garnish, if desired. (**This makes alot of gravy, consider halving recipe**)
Friday, July 13-  No cooking tonight because it's the Company Picnic with fireworks!

Saturday, July 14- I came across tonight's shrimp dish and the side I plan to make, Black Bean Salad, on simplyrecipes.com  I have made the salad previously and we have enjoyed it.  I may decide on serving these on soft tacos with a garnish of the salad.  In that case I will half the salad.  I will also omit the avocado from the salad.

Cilantro Lime Shrimp Recipe

If you are using frozen shrimp, defrost them by placing them in a bowl of ice water or cold water. Adding a little salt to the water will help the shrimp retain their briny flavor.

  • 2 Tbsp high smoke point oil such as grape seed oil, or canola oil
  • 1-2 Serrano chiles, sliced into thin rings
  • 1-2 garlic cloves, sliced thinly
  • 1 pound shrimp, peeled and deveined
  • Salt
  • 1/4 cup chopped cilantro
  • 1-2 Tbsp lime juice

1 Place a large sauté pan or a wok over your strongest burner on high heat. Let the pan heat up for a minute and then add the oil. Use a high smoke point oil since you will be cooking the shrimp on very high heat. Let the oil heat until it's shimmering. If it starts to smoke, remove the pan from the heat for a moment.
2 Add the chiles to the pan and toss to coat with oil. Cook 30 seconds. Add the shrimp and garlic to the pan and sprinkle with salt. Toss to coat with oil. Let the shrimp cook undisturbed for 1 minute before tossing again so they get a little bit of a sear. Stir-fry until cooked through, about 2-3 minutes.

3 Turn off the heat and mix in the cilantro, then the lime juice.
Serve hot or at room temperature. Serve alone, over rice, or in a folded heated flour or corn tortilla.
Yield: Serves 3-4.
  
Black Bean Salad Recipe

  • 1 (15 ounce) can of black beans, thoroughly rinsed, and drained (or 1 1/2 cup of freshly cooked black beans)
  • 1 1/2 cups frozen corn, defrosted (or fresh corn, parboiled, drained and cooled)
  • 1/2 cup chopped green onions or shallots
  • 2 fresh jalapeño peppers, seeded and minced, or 1 whole pickled jalapeño pepper, minced (not seeded)
  • 3 fresh plum tomatoes, seeded and chopped
  • 1 avocado, peeled, seeded, and cut into chunks
  • 1/2 cup fresh chopped cilantro
  • 1/4 cup fresh chopped basil
  • 2 Tbsp lime juice (about the amount of juice from one lime)
  • 1 Tbsp olive oil
  • 1/2 to 1 teaspoon of sugar (to taste)
  • Salt and pepper to taste

Make sure to rinse and drain the beans, if you are using canned beans.
In a large bowl, combine the beans, corn, onions, jalapeno chile peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil. Add sugar and salt and pepper to taste. (The sugar will help balance the acidity from the tomatoes and lime juice.) Chill before serving.
Serves 6 to 8.

Sunday, July15- I plan to make the Stuffed Peppers I have made a number of times now and we all enjoy, using the Bell Peppers from my Box.
Stuffed Peppers  WW Pts: 7
  • 4 large peppers (8 banana peppers)
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1 (14 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 1/4 teaspoons salt, divided
  • 1/4 teaspoon ground black pepper, divided
  • 1 egg
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • 1 pound Italian sausage
  • 3/4 cups bread crumbs
  1. Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
  2. Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 3/4 teaspoon salt and 1/8 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
  3. Meanwhile, in a large mixing bowl, combine egg, 1/4 teaspoon salt, 1/8 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in sausage, bread crumbs and 1 cup of the tomato sauce mixture.
  4. Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
  5. Bake uncovered in preheated oven for 1 hour. (optional- last 15 minutes sprinkle shredded mozzarella cheese)

Monday, July 16-  Ballet and Golf Night with all of us literally in different directions and all in the midst of meal time, it will be breakfast for dinner, leftovers or even take out.

Tuesday, July 17Marinated Grilled Sliced Steak over Brazilian Rice Beans will be this evening's meal.
The steak will be marinated in lime juice, olive oil, salt, pepper, cumin and chili pepper.  After marinating it will be grilled and served over Brazilian Black Beans (Feijão) and Rice.
Feijao WW Pts: 1
1-2 cans black beans
2 cloves garlic (pressed)
bacon (chopped)
black pepper
  1. Fry up bacon until crispy
  2. Add garlic and saute
  3. Add beans with juices and add about 1/4 cup water to pan
  4. Simmer for 10 minutes
  5. Serve over rice.
Rice WW Pts: 3
1 small onion diced
1-2 garlic cloves minced
1 cup long grain rice
1 1/2 cups water
1 tsp salt
  1. Saute onion until soft
  2. Add garlic and saute.  Add rice and stir fry.
  3. Add water and salt, bring to boil.
  4. The water level will begin to drop.  Cover and reduce heat.
  5. When the rice is cooked, turn off the heat and let the rice rest for about 10 minutes.

July 27- August 2 Not a whole lot of cooking going on!

This week my Produce Box consisted of:
  • 1 Qt. Peaches
  • Green Beans
  • 1 Personal Watermelon
  • 6 Ears of Corn
  • 1 oz. Fresh Basil
  • Hot Pepper Variety
  • Butternut Squash 
I never made the Peach cobbler last week.  So this week I will use my peaches to make that recipe.  
Delicious Peach Cobbler
4 cups of peeled, sliced peaches
2 cups sugar divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self rising flour (if you don't have any you can easily make some- I did using a google search: 1 1/2 cup all purpose flour mixed with 3/4 teaspoon each baking powder and salt)
1 1/2 cups milk
ground cinnamon, optional

-Preheat oven to 350
-Combine peaches, 1 cup of sugar & water in saucepan and mix well. Bring to boil and simmer for 10 minutes. Remove from heat.
-Put butter in a 3-qt. baking dish and place in oven to melt.
-Mix remaining 1 cup sugar, flour and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if desired.
-Bake for approx. 1 hour
Can be served with whipped topping and/or ice cream. Refrigerate left overs.

I will roast and then puree the Butternut Squash and use it in place of the pumpkin puree in my Pumpkin Bread Recipe.  I will post this recipe separately.

Wednesday, July 27-  Between running to 2 Open Houses and it's my Birthday, I am not cooking dinner tonight.  Not sure what will be for dinner but I know for sure I won't be making it!

Thursday, July 28-  I will use some of the corn and green beans for a side salad, Orzo Salad with Corn, Green Beans and Tomatoes (recipe from myrecipes.com).  I will freeze the remaining corn to have at a later time.  I think my girls have had their fill of corn these past few weeks.  I will also make Apricot Glazed Grilled Pork Chops (whisk 2 tablespoons cider vinegar with 1/4-1/2 cup of apricot preserves, brush glaze on meat during last 5 minutes of grilling).  The meal will be rounded out with slices of watermelon.

Orzo Salad with Corn, Green Beans and Tomatoes (I will halving this recipe)

  • 1 pound green beans
  • 1 1/2 cups dried orzo pasta (8 oz.)
  • 3 ears fresh corn (10 to 14 oz. each; see notes)
  • 1/2 cup white wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup minced shallots
  • 2 tablespoons Dijon mustard
  • 2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
  • Salt and pepper
  • 2 cups cherry tomatoes (12 oz.), rinsed, stemmed, and cut in half

1. In a 5- to 6-quart pan over high heat, bring about 2 quarts water to a boil. Meanwhile, rinse green beans, trim off ends, and pull off any strings. Cut into 2- to 3-inch lengths. Add beans to boiling water and cook until barely tender to bite, 3 to 5 minutes. Drain and immerse in ice water until cold; drain well.
2. Fill same pan with 2 1/2 to 3 quarts water and bring to a boil over high heat. Add orzo and cook until barely tender to bite, 8 to 11 minutes. Drain and rinse with cold water; drain well.
3. Meanwhile, husk corn, discarding silk; rinse ears. Holding each ear upright in a large, deep bowl, cut off kernels close to the cob.
4. To make dressing: In a small bowl, whisk together vinegar, olive oil, shallots, mustard, tarragon, and salt and pepper to taste.
5. In a large, wide bowl, mix orzo with 1/2 cup of the dressing. Add more salt and pepper to taste. Spread level. Layer corn kernels, green beans, and tomatoes over pasta. Pour remaining dressing into a container. Cover and chill both salad and dressing until ready to serve.
6. Shortly before serving, pour three-fourths of the remaining dressing over salad and mix gently to blend. Add more dressing and salt and pepper to taste.

Friday, July 29-  We will be attending my husband's family work event at the Durham Bulls Park.  Hotdogs, popcorn and a glass a beer are in my future tonight!
Saturday, July 30- My husband and I are going on a date night!  Again no cooking, glad those green beans will hold for a awhile!

Sunday, July 31-  Despite the fact that my husband and older daughter will be playing in a golf tournament tonight, I plan on making dinner for my little one and myself. It will simple like spaghetti and meatballs.


Monday, August 1-  I will use the remaining green beans for a garlic saute garnished with chopped tomatoes and sprinkled with Parmesan cheese. (Heat olive oil, add 2-3 cloves minced garlic and cook for 2-3 minutes.  After washing, trimming and cutting the beans saute them in olive oil for 5-8 minutes.  You can add chopped tomatoes and saute for another 3 minutes or remove from heat and add tomatoes.  Sprinkle with cheese and serve.)  The green beans will be served with a grilled garlic seasoned steak and a loaf of warmed bread.
Tuesday, August 2- It's Mexican tonight!  I will use some of the peppers in a Mexican inspired dish and the remaining peppers will be frozen for later use in salsas and other meals.

    June 29- July 5 A menu without a Box

    This week I did not get a Produce Box.  Although each box was filled with delicious fresh produce, I still have much of the fruit I received last week and couldn't get through my remaining fruit AND the new fruit included in each box.  So I am left to my own devices to come up with this weeks meals.  I will stop off at both DJs Berry Patch's farm stand and the new farm shop in downtown Apex for some of the fresh produce required to make each meal.

    Wednesday, June 29- Tonight I am thinking of making Chicken and Tortellini Salad which I found in my June issue of Southern Living.

    Chicken and Tortellini Salad
    • 2 (9-oz.) packages refrigerated cheese-filled tortellini
    • 1/2 cup olive oil
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup fresh lemon juice
    • 2 garlic cloves
    • 1 teaspoon Worcestershire sauce
    • 2 cups chopped cooked chicken
    • 1 cup frozen sweet peas, thawed
    • 1/2 cup thinly sliced green onions
    • 1/2 cup chopped fresh flat-leaf parsley
    • Salt and pepper to taste
     
    1. Prepare tortellini according to package directions.
    2. Process olive oil and next 4 ingredients in a blender until smooth. Toss olive oil mixture with tortellini, chicken, and next 3 ingredients. Add salt and pepper to taste.
