This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

Below is a compilation of weekly meals using the produce delivered by The Produce Box as well as some other recipes which have inspired me.

Carrots, Lettuce, Peppers Oh My! March 7-Mach 11th

Carrots, Lettuce, Peppers Oh My!

This week I only added a share of carrots to my box.  We enjoy eating fresh carrots throughout the year in our meals and dishes and what better way then to blanch and freeze for later use, farm fresh carrots!
My box consisted of:
  • carrots
  • green peppers
  • bibb lettuce
  • strawberries
  • clementines
  • yellow squash
I never defrosted during the week a freezer crock pot meal instead I made something else for dinner and treated the family to a church fish fry rather than making chicken pot pie.

The strawberries and clementines are quickly disappearing as sweet snacks and toppings for breakfast pancakes and yogurts. As mentioned above I will be blanching and freezing the carrots for later use.

Friday March 7-  Church fish fry was our dinner.

Saturday, March 8-  With the arrival of Spring weather I am grilling hamburgers and hotdogs served with fresh sliced tomatoes from last weeks box, clementines and garnished with bibb lettuce.  I also serve up either some beans or pasta salad.  And some garlic and olive oil grilled squash.

Sunday, March 9-  I NEED room in my freezer and I foresee another beautiful day "playing" outside.  So what better solution to not wanting to be trapped in the kitchen and making room in my freezer then with a crock pot meal?  Chicken Thighs with Sweet Potatoes
Crock-Pot Chicken Sweet Potatoes
  • 8 boneless, skinless chicken thighs
  • 1 teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • ½ teaspoon ground ginger
  • 3 sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 1 cup peach preserves OR apricot preserves
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • ½ cup chicken broth or water
  • 2 tablespoons cornstarch
  1. Sprinkle chicken with salt, cayenne pepper, paprika, curry powder, and ginger. Add peach preserves, vinegar, and soy sauce to gallon freezer bag. Add in sweet potatoes and onion, and top with chicken. Seal bag and place in freezer. When ready to use thaw in fridge overnight. Cover and cook on low for 6-8 hours until chicken is thoroughly cooked and sweet potatoes are tender when pierced with fork.
  2. Combine chicken broth and cornstarch and mix well. Add to slow cooker. Cover and cook on high 10-15 minutes until sauce is thickened.
Monday, March 10-  With the first soccer practice of the evening tonight, I need simple and quick.  I'll make fajitas using the green peppers from my box.

Tuesday, March 11-  I will make fish tacos using the bibb lettuce roughly cut in place of the slaw. 

Fish Tacos  WW Pts: 9

Marinade
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 1 1/2 teaspoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon seafood seasoning, such as Old Bay™
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon hot pepper sauce, or to taste
  • 1 pound cod, cut into chunks
Dressing
  • 1 (8 ounce) container light sour cream
  • 1/2 cup adobo sauce from chipotle peppers
  • 2 tablespoons fresh lime juice (I might reduce to 1 tbspn)
  • 2 teaspoons lime zest
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon seafood seasoning, such as Old Bay™
  • salt and pepper to taste
  • Chopped Cilantro
  • packaged cole slaw mix
  • 1 (10 ounce) package tortillas
  • 3 ripe tomatoes, seeded and diced

Directions

  1. To make the marinade, whisk together the olive oil, vinegar, lime juice, lime zest, honey, garlic, cumin, chili powder, seafood seasoning, black pepper, and hot sauce in a bowl until blended. Place the fish in a shallow dish, and pour the marinade over the fish. Cover, and refrigerate 6 to 8 hours.
  2. To make the dressing, combine the sour cream and adobo sauce in a bowl. Stir in the lime juice, lime zest, cumin, chili powder, seafood seasoning. Add salt, and pepper in desired amounts. Cover, and refrigerate until needed.
  3. Preheat oven to 350 degrees F (175 degrees C). Bake fish in preheated oven until it easily flakes with a fork, 9 to 11 minutes. (Fish can also be grilled)
  4. Assemble tacos by placing fish pieces in the center of tortillas with desired amounts of tomatoes, cilantro, and slaw; drizzle with dressing.

Jan 13-18

Monday, Jan. 13-  This evening I made frozen potato encrusted cod along with Trader Joe sweet potato tots and a garden salad.  I must say for frozen fish it was awesome!

Tuesday, Jan. 14- This evening I used Campbells Skillet Sauces, scampi, to prepare shrimp scampi served over angel hair pasta and sliced bread.  It was a simple yet tasty meal.

Wednesday, Jan. 15-  I defrosted one of the crock pot freezer meals prepared earlier to make for dinner tonight. 


Crock-Pot Cheesy Chicken Potato & Broccoli
  • 2-4 chicken breasts
  • 1 large green pepper, chopped
  • 2 cups broccoli, chopped
  • 1 lb. red potatoes, sliced thin
  • 1 tsp. paprika
  • 1 can condensed cream of chicken soup
  • 1 Tbsp. Worcestershire sauce
  • ¼ cup chopped fresh parsley – (I used dried parsley)
  •  ¼lb. (4 oz.) VELVEETA®, cut into ½-inch cubes
  1. Add all ingredients except for cheese in a gallon freezer bag. Seal bag and place in freezer. When ready to use thaw in fridge overnight. Cook 8 hours low. Add cheese and cook on high for 5 minutes. Stir melted cheese in.
Thursday, Jan. 16-  I am thinking tortillini served in a pink sauce and a garden salad for dinner this evening.  Simple but enjoyed by the whole family!

Friday, Jan. 17-  I plan to oven bake some pork chops most likely season with Shake N Bake served along side roasted garlic red potatoes (diced red potatoes drizzled with olive oil and sprinkled with Tastefully Simple's Garlic Garlic)


Saturday, Jan. 18-  With the purchase of a new deep fryer, we are eargerly anticipating Beer Battered Fish most likely served with fries and a salad.
Alton Brown's Beer Battered Fish
2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Dash Old Bay Seasoning
1 bottle brown beer, cold
1 1/2 pounds firm-fleshed whitefish (tilapia, pollock, cod), cut into 1-ounce strips
Cornstarch, for dredging
 
In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning. Whisk in the beer until the batter is completely smooth and free of any lumps. Refrigerate for 15 minutes. Note: The batter can be made up to 1 hour ahead of time. 
 
Bring oil to 350 degrees. Lightly dredge fish strips in cornstarch. Working in small batches, dip the fish into batter and immerse into hot oil.  Drain the fish on the roasting rack. Serve with malt vinegar.

August 15- August 21

I opted for the fruit Box this week.  I will be receiving 2 watermelons, 2 cantaloupes, peaches and grapes.  For my meals this week, I will drop by DJ's Berry Patch for any needed fresh produce.

Wednesday, August 15-  I didn't make this last week and it will be perfect for tonight's dinner.  Grilled Sausage Sandwiches served with onions and peppers along with Camper Potatoes, from an earlier Box. 
Camper Red Potatoes
  • sliced red potatoes, dabs of butter, sliced onion or onion powder- Make foil packets and grill until browned and crispy about 30-40 minutes on low heat

Thursday, August 16-  Girls Night Out for me tonight.  My husband will be making a family recipe for easy homemade Mac N Cheese.
Friday, August 17-  Tonight is my daughter's golf lesson, which also occurs during dinnertime.  I think it will be take out for us. 
 
Saturday, August 18-   Due to a conflict I tabled this meal from last week for tonight.  This recipe comes from skinnytaste.com  I will serve it over rice.
Garlic Shrimp in Coconut Milk, Tomatoes and Cilantro
Servings: 4 • Serving Size: 1/4 • Old Points: 6 pts • Points+: 6 pts
Calories: 272.5 • Fat: 9.7 • Carbs: 13.7 • Fiber: 2.7 • Sugar: 4.2 • Protein: 30.7
  • 1 1/4 lbs jumbo shrimp, peeled and deveined (weight after peeled)
  • 1 tsp extra virgin olive oil
  • 1 red bell pepper, sliced thin
  • 4 scallions, thinly sliced, white and green parts separated
  • 1/2 cup cilantro
  • 4 cloves garlic, minced
  • kosher salt (to taste)
  • 1/2 tsp crushed red pepper flakes (to taste)
  • 14.5 oz can diced tomatoes
  • 14 oz can light coconut milk (50% less fat)*
  • 1/2 lime, squeezed
In a medium pot, heat oil on low. Add red peppers and sauté until soft (about 4 minutes). Add scallion whites, 1/4 cup cilantro, red pepper flakes and garlic. Cook 1 minute.

Add tomatoes, coconut milk and salt to taste, cover and simmer on low about 10 minutes to let the flavors blend together and to thicken the sauce.

Add shrimp and cook 5 minutes. Add lime juice.

To serve, divide equally among 4 bowls and top with scallions and cilantro.

Sunday, August 19-  Golf Tournament today.  Not sure who will be around for dinner tonight.  So it might be simple like breakfast for dinner, or maybe we'll all go out for a quick bit.  I will have to see what happens.

Monday, August 20-  I have been craving pot pie.  Since it should be a little cooler, I think I will make Chicken Pot Pie tonight.
Chicken Pot Pie 6 WW Pts
  • 2 deep dish pie shells 
  • 1 can of cream of chicken soup (per a friend's suggestion I am using cream of chicken with herbs)
  • 1or 2 cans of veg-all vegetables (or combination of fresh & frozen veggie mix- I used carrots, celery, onion, peas & corn)
  • 2-3 cups cooked chicken 
  • 1/2-3/4 cup milk 
  • Salt and pepper to taste
  • 1/2 teaspoon thyme
  1. Boil chicken in chicken broth.  After it is cool cut in to small pieces 
  2. Reserve broth and boil fresh or frozen vegetables for 5 minutes and drain.
  3. Pre heat oven 375 degrees 
  4. Mix chicken, vegetables, soup and milk in a medium bowl 
  5. Add salt and pepper to taste and thyme
  6. Pour mixture in pie crust cover with 2nd pie crust 
  7. Cook pie for about 30 minutes or until crust is golden brown.  Allow to cool for 5-10 minutes before slicing.
Tuesday, August 21-I am in the mood for fish.  The Fish Taco recipe was taken from allrecipes.com with a few modifications as follows.

July 31- August 6

This week my Box includes:

Tuesday, July 31- Since last week while forming my menu I didn't know what I would be preparing tonight, I have decided to include tonight's meal on this menu posting since I have finally decided!
I found this recipe at allrecipes.com and added the recommendations from reviewers.  I also halved the recipe since the original made 10 servings! I'll add Italian Sausage to this dish to bulk it up and create a main course.  I may substiute the kale with spinach as well.  This recipe without the addition of tomatoes and beans yields 4 WW Pts.  for 1 cup.

Orzo with Kale
  • 1/2 teaspoon ground turmeric
  • 1 cups uncooked orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, sliced
  • 1 Red Bell Pepper, diced
  • 1 cup Chicken Broth or White Wine
  • 1/4 teaspoon crushed red pepper flakes
  • 1 bunch kale, stems removed and leaves coarsely chopped
  • 1 15oz can of white beans drained and rinsed
  • 1 diced tomato or cherry/grape tomatoes halved
  • 1 large lemon, juiced
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Parmesan cheese, or to taste
  • salt and black pepper to taste

Directions

  1. Bring a large pot of lightly-salted water to a boil; sprinkle the turmeric over the boiling water and stir in the orzo; return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes; drain. Scrape into a mixing bowl and set aside.
  2. While orzo is cooking, Heat the olive oil in a large skillet over medium heat. Cook the garlic and red pepper in the hot oil. Add red pepper flakes and broth or wine.  Stir the kale into the broth, cover the skillet with a lid, and cook for 10 minutes. Remove the cover and  add the beans.  Continue cooking and stirring until the kale is tender, about 10 minutes more (add more liquid if necessary). Stir the kale mixture into the orzo along with the lemon juice, nutmeg, Parmesan cheese and tomatoes. Season with salt and pepper. Serve warm or at room temperature.

Wednesday. August 1- With company arriving and delivering for the Produce Box, I want a simple meal tonight.  Therefore, I will serve hamburgers and hotdogs along with fresh corn on the cob from my Box and baked beans.

Thursday, August 2-  With company in town, tonight's meal is always a crowd pleaser and works great for the masses.
Chicken Enchiladas  approx. 7 WW Pts.
1 lb chicken
4oz can of chopped green chile peppers (I'll be using my hot green chiles from last week's Box)
1 small onion
1 can of cream of chicken soup
1/2 cup Sour Cream
1 tsp chili powder
Small Can of Enchilada Sauce
1 package of large sized soft flour tortillas
1 package Mexican cheese (or cheddar)

1. Heat large skillet on med/high heat. Add 1-2 tablespoons of olive oil to coat pan
3. Cook chicken through about 8-10 minutes.
4. While chicken is cooking chop onion
5. Remove chicken to cutting board, add chopped onion to skillet and chili powder
6. While onion is cooking, dice up chicken
7. In a small bowl combine the can of cream of chicken soup, 1/2 cup of sour cream & 2 tablespoons of enchilada sauce. Mix and set aside.
8. Once onion is tender add chicken, green chilies, about 1/4 cup of sour cream mixture & enchilada sauce (add enough to add moisture to skillet about 1-3 tablespoons) Stir and Heat through.
9. In a 9 x 13 baking dish lightly cover bottom of pan with the sour cream mixture.
10. Add chicken mixture to tortillas and roll up, place seam side down in baking dish. (tortillas can be touching each other in dish)
11. Cover tortillas with remaining sour cream mixture and sprinkle with cheese
12. Bake in a 350 degree oven covered for 20-25 minutes then uncover and bake additional 5-10 minutes or until cheese is bubbly and lightly browned.

**Meal can be prepared ahead of time and refrigerated. When ready to bake add 15 minutes to bake time or until heated through.

Friday, August 3-  With indulging in a large lunch today, I am not sure if we will all be in the mood for a heavy dinner tonight.  I will need to play this evening's meal by ear.

Saturday, August 4-  Grilled steaks, lamb and either grilled or roasted potatoes (from my Box) along with green beans (blanched and frozen from an earlier Box) will round out this evening's dinner.

Sunday, August 5-  Depending on my company's preferences, I may make Fish Tacos tonight.  Otherwise, I am thinking of making my Chicken Pot Pie recipe.  Taken from a previous post on this blog comes tonight's dinner, Fish Tacos.  The Fish Taco recipe was taken from allrecipes.com with a few modifications as follows.

July 23-July 31


I never made a menu for last week into this week.  Therefore, this post is an extra long menu planner!

Our Box this week will consist of:
  • 2 qt Peaches
  • Sweet Corn (4)
  • Irish potatoes (red or white)
  • Assorted Eggplant
  • Cubanelle and Poblano Mix Peppers
  • Grape Tomatoes (1 Pt.)
I never made the Peach Muffins.  Instead we made peach topping for crepes and pancakes over the weekend.  With a double batch of peaches this week, I am sure I will make this recipe.
Peach Cobbler Mini Muffins
  • 1 1/2 cups all-purpose flour
  • 1/2 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup white sugar
  • 1-2 cups peeled, pitted, and chopped peaches
1. Preheat oven to 400° F. Line the mini muffin tin with mini muffin papers.

2. In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups

3. Bake 17-20 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely. Makes approximately 24 mini muffins. **I plan to make regular sized muffins**
Monday, July 23-  Dance/Golf nights always mean eating separately and usually take out.
Tuesday, July 24-  Looking for inspiration and something different I came across tonight's recipe on Tastefully Simple's website.  The girls will dine on quesidillas.
Simply Southwest Fish Tacos

2-3 tsp. Simply Southwest Seasoning & Rub
1 lb. white fish fillets, such as cod, tilapia or orange roughy
6 hard corn taco shells
Shredded lettuce
Diced tomatoes
Shredded Cheddar cheese
Salsa
Sour cream

Preheat oven to 350°. Sprinkle Simply Southwest Seasoning & Rub to taste on fish fillets; place fillets on lightly greased baking sheet. Bake for 10-15 minutes or until fish flakes easily. Break fish into bite-size pieces, place in taco shells. Top fish with remaining ingredients. Makes 6 servings.
Wednesday, July 25-  School Function this evening.  The kids are going out with my husband while I go to school.

Thursday, July 26-  It's just us girls tonight.  Turkey meatballs and spaghetti with a loaf of bread will be tonight's meal.

Friday, July 27-  I am not cooking tonight- Birthday Celebration in order!

Saturday, July 28I will use the corn from my Box to make this dish.  Not sure if I can use the potatoes, will need to research that.  I will grill a steak to serve along side the potato salad.
Corn and Potato Salad (BHG August 2012)
  • 3 ears corn
  • 2 pounds small waxy potatoes, such as Yukon Gold or Red Bliss
  • Kosher salt
  • 1 medium red onion
  • 3 tablespoons cider vinegar
  • Black pepper
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup finely chopped fresh basil
  • 1/2 cup finely chopped cilantro

1. Shuck the corn, then place the ears in a large pot with the potatoes. Add water and 1 tablespoon salt to cover by 2 inches. Bring water to a boiling. Boil, covered, for 2 to 4 minutes, until corn is tender. Remove corn. Continue to boil the potatoes 15 to 20 minutes until very tender.
2. While the potatoes cook, finely chop the onion. In a large bowl combine chopped onion, vinegar, salt, and the 1/2 teaspoon pepper. Cut the kernels from ears of corn, then add onion to bowl.
3. When potatoes are very tender, drain in a colander. Cool enough to handle. Place potatoes on a board, then press with hands or potato masher to break up. Add potatoes to the onion and corn. Add the oil; gently stir to combine. Let salad come to room temperature, then add herbs and season with salt and pepper to taste. If desired, cover and refrigerate up to 24 hours. Let stand at room temperature for at least 1 hour before serving. If needed, toss with additional olive oil and vinegar before serving.

March 1- March 6

I wasn't thrilled with the pork meal I made, don't think that we'll do that one again.  The potato salad was a different and nice change from the mayo-ladden salads. I still haven't made the sweet potato burritos.  Maybe sometime soon I will give it another try.
Thursday, March 1- Grilling Hamburgers and hotdogs tonight and serving it with a lighter version of macaroni salad.

Lightened Up Macaroni Salad
Servings: 7 Size: 3/4 cup Points: 3 pts
  • 6 oz dry elbow macaroni
  • 1/4 cup light mayonnaise
  • 2 tomatoes, diced
  • 1/2 cup chopped bell pepper
  • 1/4 cup red onion, diced
  • 1 tbsp white vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp oregano
  • dash of garlic powder (I am using Garlic Garlic)
  • salt and fresh pepper to taste
Cook pasta in salted water according to package directions. While pasta is cooking, combine all ingredients and mix well. When pasta is done (do not overcook) rinse under cold water. Combine pasta with other ingredients and season with salt and pepper. Chill before serving.

Friday, March 2-  I have made a grilled tuna dish that my husband loves.  If tuna steaks aren't too expensive that will be tonight's meal.

Grilled Teriyaki Tuna Wraps 7 Pts (w/ Ole Tortilla Wrappers)

  • 3 8 ounces tuna steaks, 1-inch thick*
  • 1/3 cup soy sauce
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons packed brown sugar
  • 1 1/2 teaspoons finely shredded fresh ginger
  • 8 10 inches flour tortillas
  • 1 tablespoon cooking oil
  • 3/4 cup fat-free dairy sour cream
  • 3/4 cup bottled honey-mustard salad dressing
  • 2 cups lightly packed arugula leaves
  • 1 large red onion, sliced (1 cup)
  • 1 medium tomato, chopped (1 cup)
Directions
1. Place fish in a plastic bag set in a shallow dish. In a small bowl stir together soy sauce, garlic, sugar, and ginger; pour over fish. Seal bag. Marinate in refrigerator 1 to 2 hours; turn bag occasionally. Drain; discard marinade. For charcoal grill, grill fish on greased rack of uncovered grill directly over medium coals for 8 to 12 minutes or until fish flakes easily (tuna may be slightly pink in center), turning once. (For gas grill, preheat grill. Reduce heat to medium. Place fish on greased grill rack over heat. Cover; grill as above.) Cut tuna into 1/2-inch chunks. Brush both sides of tortillas lightly with cooking oil and place 2 at a time on grill rack for 30 to 45 seconds or just until warmed.
2. In a medium bowl stir together sour cream and salad dressing. For each wrap, spread 3 tablespoons of the sour cream mixture on a tortilla. Place some of the tuna near an edge of tortilla. Top with some of the arugula, onion, and tomato. Fold edge over filling; fold in the sides and roll up. Makes 8 wraps.

  • Note *To substitute one 1-1/2-pound beef flank steak, marinate as above. Grill directly over medium coals 17 to 21 minutes or until medium (160 degree F); turn once. Serve as above.

Saturday, March 3-  I am thinking a trip to the Meat House is in order for their delicious marinated steak tips.  We'll grill the steaks along with some red potatoes and if asparagus is on sale that as well! WW Pts: Steak 2oz = 2.5Pts; Red Poatoes 8oz = 3Pts.

Sunday, March 4- I am a little hesitant that this will be enough to both stuff and cover the chicken but that is an easy fix if necessary.   I stumbled upon this recipe on skinnytaste.com

Chicken Rollatini with Spinach alla Parmigiana
Servings: 8 • Serving Size: 1 stuffed breast • Points: 4 pts
  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese, divided
  • 6 tablespoons egg whites or egg beaters
  • 5 oz frozen spinach, squeezed dry of any liquid
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella
  • olive oil non-stick spray
  • 1 cup your favorite marinara sauce
  • salt and pepper to taste
Wash and dry cutlets, season with salt and pepper.  Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.

Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.

Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese.

Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.

Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with olive oil.

Bake 25 minutes. Remove from oven, top with sauce then cheese.  Bake until cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.

Monday, March 5I have made this meal many times before, BBQ Pork Sandwiches.  I am thinking Southern Green Beans would be a good side and any left over macaroni salad from early.  I will use my Pampered Chef Deep Covered Baker to microwave some boneless pork strips sprinkled with some BBQ seasoning. (Rolls 2Pts.; Pork 2oz = 3Pts; 1Pt Sauce)
  • Brush with oil and rub seasoning onto pork. Place into baker, cover and microwave on HIGH for 6-10 minutes or until internal temperature reaches 150. Remove from microwave, keep it covered for 10 minutes allowing the temperature to rise to 160. Top with Barbecue Sauce and server as main dish, or shred meat and use in sandwiches.
Barbecue Sauce

1 cup ketchup
2 Tbsp Barbecue Rub
¼ cup brown sugar
2 tsp cider or white vinegar
  • Combine ingredients and bring to boil, stir occasionally.
Tuesday, March 6-  I have made baked ziti for years but stumbled upon this lighter version on Skinnytaste.com  I'll give it a shot and serve it with a green salad and some sliced bread.

Low Fat Baked Ziti with Spinach
 Servings: 8 • Serving Size: approx 2 cups Points: 6 pts
Calories: 331.9 Fat: 7.1 g Protein: 17.5 g Carb: 54.7 g Fiber: 7.8 g
  • 1 lb high fiber ziti
  • 28 oz crushed tomatoes
  • 1 tsp olive oil
  • 3 cloves garlic,minced
  • 1/2 onion diced
  • 10 oz frozen spinach, thawed
  • 1 tsp oregano
  • 2 tbsp chopped fresh basil
  • salt and fresh pepper to taste
  • 8 oz fat-free ricotta
  • 1/4 cup Parmesan
  • 2 cups (8 oz) part skim mozzarella
  • Spray olive oil
Preheat oven to 375°. Spray a 9x13-inch baking pan with oil spray.

In a large pot of salted water, cook pasta according to instructions until al dente. Drain and return to pot.

Meanwhile, in a medium saucepan, add olive oil and sauté onions and garlic. Add chopped spinach, salt pepper and chopped tomatoes. Season with basil, oregano, salt and pepper.

Add sauce to the pasta and combine the ziti. Add half of the mozzarella, all the Parmesan cheese and ricotta. Mix well then transfer to the baking pan.

Pour the pasta mixture into the prepared pan and spread evenly. Top with the remaining mozzarella.

Bake for 30 minutes, or until mozzarella is melted and the edges are lightly browned.

The Bowties with White Beans and Spinach worked well and will be made again in the future.  I didn't make the pork or sweet potato recipes last week.  So they will get bumped to another night.  

Thursday, February 23-  With this exceptional Spring weather, I am in the mood to grill hamburgers!  I haven't decided on a side yet.  I want to keep it low calories so I discovered this yummy side on Skinnytaste.com 

BLT Macaroni Salad
Gina's Weight Watcher Recipes
Servings: 7 Serving Size: 1 cup Points: 3 pt
  • 8 oz uncooked elbows, low carb or whole grain (brown rice pasta for gf)
  • 4 slices 25% reduced fat center cut bacon
  • 2 large ripe tomatoes, beefsteak or vine ripe, diced small (1 can of diced tomatoes drained can be substituted)
  • 4 tbsp reduced fat mayonnaise (I didn't have reduced fat mayo- so I used 2 tbsp Reduced Fat Sour Cream & 2 tbsp Mayo)
  • 1-2 teaspoons of Tastefully Simple's Garlic Garlic or Onion Onion
  • salt and fresh pepper to taste
  • 2 cups baby spinach
In a large skillet cook bacon on medium-low heat until crispy on both sides.

In a large pot of boiling salted water, cook pasta according to package directions.

Chop tomatoes and combine it along with any accumulated juice with mayonnaise, spices and pepper in a medium bowl. Drain pasta and rinse with cold water to cool. Combine pasta with tomatoes and spinach mixing well. Toss in bacon right before serving.

Saturday, February 25-  I think I will make the Pork Chops with Carrots and Oranges this evening.
Pork Chops with Carrots and Oranges 
WW Pts: 2 for carrots; 2oz Pork 3pts.
  • 2 teaspoon(s) honey
  • 1/2 teaspoon(s) ground cumin
  • 2 tablespoon(s) olive oil
  • Kosher salt and pepper
  • 1 1/2 pound(s) medium carrots, cut into 2-in. pieces (halved lengthwise if large)
  • 1  navel orange, cut into wedges
  • 1 teaspoon dill (optional)
  • 4  1-in.-thick pork chops, trimmed (about 1¼ lb total)
  1. Heat oven to 400°F. In a small bowl, whisk together the honey, cumin, 1 Tbsp oil, ½ tsp salt and ¼ tsp pepper.
  2. Toss the carrots with the honey mixture.  Season pork chops with salt and pepper (and dill is using).  
  3. Arrange pork and carrots in deep dish covered baker. Nestle the oranges among the carrots, cover and roast until the carrots are tender and pork is cooked through, 30 to 45 minutes.
Sunday, February 26-  I have wanting some fish.  So I will search for some ideas and purchase some fresh fish over the weekend for tonight's meal.  If I don't come across another recipe I will most likely make this simple dish I found on Skinnytaste.com and serve it with the red potato salad I also found on Skinny Taste.
Baked Garlic Lemon Tilapia
Gina's Weight Watcher Recipes
Servings: 6 servings Total Time: 15 minutes Points: 5 pts

  • 6 (6 oz each) tilapia filets
  • 4 cloves garlic, crushed
  • 2 tbsp butter
  • 2 tbsp fresh lemon juice
  • 4 tsp fresh parsley
  • salt and pepper
  • cooking spray
Preheat oven to 400°.

Melt butter on a low flame in a small sauce pan. Add garlic and saute on low for about 1 minute. Add the lemon juice and shut off flame.

Spray the bottom of a baking dish lightly with cooking spray. Place the fish on top and season with salt and pepper. Pour the lemon butter mixture on the fish and top with fresh parsley. Bake at 400° until cooked, about 15 minutes.

Baby Red Potato Salad

Servings: 6 Size: 3/4 cups Points: 2 pts
  • 4 cups baby red potatoes, cut in small pieces
  • 1/2 cup green bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 3 scallions, diced
  • 1 tsp dijon mustard
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp reduced fat mayonnaise
  • salt and fresh pepper
Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool.

While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper. Mix well and let the flavors marinade while the potatoes cook. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.
Monday, February 27-   I am contemplating making the Sweet Potato and Black Bean Burritos tonight, the recipe I never made it to last week.
Sweet Potato and Black Bean Burritos  
WW Pts: 7 for 2 burritos using Fiber Ole tortillas & 2% Mexican Cheese 28g
  • 1 tablespoon(s) olive oil
  • 1 large sweet potato, peeled and cut into 1/2-in. pieces
  • 1 medium red onion, half chopped and half thinly sliced
  • Kosher salt and pepper
  • 1 15 1/2 ounce(s) can black beans, rinsed
  • 1 tablespoon(s) chopped chipotle peppers in adobo
  • 1 small bunch spinach, thick stems discarded, leaves coarsely chopped
  • 6- ounce(s) Monterey Jack cheese, coarsely grated
  • 4 large flour tortillas
  1. Heat 1 Tbsp of the oil in a large skillet over medium heat. Add the sweet potato, chopped onion and 1/2 tsp salt and cook, covered, stirring occasionally, until tender, 10 to 12 minutes.
  2. Add the beans and chipotles and cook, stirring occasionally, for 2 minutes. Add the spinach and cook, tossing, until it begins to wilt, 1 to 2 minutes. Divide the cheese and potato-bean mixture among the tortillas (about 1 cup each) and roll up to form burritos. Wipe out the skillet and heat over medium heat. Cook the burritos (seam-side down first) until golden brown, 2 to 3 minutes per side.
