This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

Loaded Sweet Potato- Perfect Quick Lunch


 


I decided to make a fulfilling healthy lunch which also left enough leftover topping for use in tomorrow's lunch!  I modified the original recipe which I found on skinnytaste.com  I will use the leftover topping as the filling for a bean burrito for tomorrow's lunch.

Loaded Baked Sweet Potato “Healthified”

  • 1 medium sized sweet potatoes
  • 1 tsp olive or canola oil
  • 1/4 red bell pepper, diced
  • 1/2 onion, diced
  • 1/2 tsp chili powder
  • 1/4 tsp paprika or smoked paprika
  • 1/4 tsp cumin
  • salt
  • 1can black beans, rinsed and drained
  • 1/4 cup mild or spicy salsa
Poke holes in the potato with a fork, cook on your microwave’s potato setting until potatoes are soft and cooked through (about 8-10 minutes on high for 4 potatoes).
Heat oil in a medium pot over medium heat. Add peppers, onions, chili powder, paprika, cumin and salt; cook until the onions have caramelized slightly, about 5 minutes. Add black beans, stir to combine and heat through (about another 5 minutes). Remove from heat and stir in salsa.
Slice the potato lengthwise down the middle  Top 1/2 cup of black bean mixture.  Garnish with lite sour cream and Mexican cheese if desired.

July 11- July 17

This week our Box consisted of:
  • 1qt. Peaches 
  • 1 pint Blueberries
  • 6 ears of Sweet Corn
  • Large Share of Green Beans
  • Tomatoes
  • Bell Pepper Mix
  • and an add on of Bibb Lettuce
The peaches and blueberries are always great snacks on hand.  I may even try making Peach Muffins.
Peach Cobbler Mini Muffins
  • 1 1/2 cups all-purpose flour
  • 1/2 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup white sugar
  • 1-2 cups peeled, pitted, and chopped peaches
1. Preheat oven to 400° F. Line the mini muffin tin with mini muffin papers.

2. In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups


3. Bake 17-20 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely. Makes approximately 24 mini muffins. **I plan to make regular sized muffins**




Wednesday, July 11-  Using the Bibb Lettuce I will make Asian Lettuce Wraps for dinner tonight.  Since I believe the kids will not particularly care for this meal I'll make Ramen Noodles and green beans from my box for them.
Asian Lettuce Wraps WW 9 pts (2 wraps with 2 small scoop beef)
  • 16 lettuce leaves
  • 1 pound lean ground beef
  • 1 tablespoon cooking oil
  • 1 large onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoons ground ginger
  • 1 tablespoon rice wine vinegar
  • Asian chile pepper sauce (optional)
  • 1/2 cup chopped peanuts
  • 1 bunch green onions, chopped
  • 2 teaspoons Asian (dark) sesame oil
Sauce
  • 1 tsp sesame oil
  • 2 T soy
  • 2 T rice vinegar
  • 1 T chile paste
Mix ingredients and spoon desired amount over wrap before rolling.

Directions

  1. Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  2. In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped peanuts, green onions, sesame oil, and cooked beef; continue cooking until the onions just begin to wilt, about 2 minutes.
  3. Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Add desired amount of sauce. Wrap the lettuce around the meat like a burrito, and enjoy!

Thursday, July 12 Although it's just the girls tonight, I plan to cook up some greens beans along with Southern Fried Chicken and gravy.  This recipe reprinted from Southern Living, orginally calls for cube steaks but I substitute boneless chicken breasts instead.  I will be blanching the remaining green beans to freeze for a later date.


Southern Fried Chicken and Gravy
  • 2 1/4 teaspoons salt, divided
  • 1 3/4 teaspoons black pepper, divided
  • 4 (4-ounce) cube steaks (I use chicken breasts)
  • 38 saltine crackers (1 sleeve), crushed (in a pinch I have substituted bread crumbs)
  • 1 1/4 cups all-purpose flour, divided
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon baking powder
  • 4 3/4 cups milk, divided 
  • 2 large eggs 
  • 3 1/2 cups peanut oil
  • Garnish: chopped fresh parsley

Preparation

  1. Sprinkle 1/4 teaspoon salt and 1/4 teaspoon black pepper evenly over steaks. Combine cracker crumbs, 1 cup flour, 1 teaspoon salt, 1/2 teaspoon black pepper, red pepper, and baking powder. Whisk together 3/4 cup milk and eggs. Dredge steaks in cracker mixture; dip in milk mixture, and dredge again in cracker mixture.
  2. Pour oil into a 12-inch skillet; heat to 360°. (Do not use a nonstick skillet.) Fry steaks 3 to 4 minutes. Turn and fry 2 to 3 minutes or until golden brown. Remove steaks to a wire rack in a jelly-roll pan. Keep steaks warm in a 225° oven. Carefully drain hot oil, reserving cooked bits and 1 tablespoon drippings in skillet.
  3. Whisk together remaining 4 cups milk, 1/4 cup flour, remaining 1 teaspoon salt, and remaining 1 teaspoon black pepper. Add milk mixture to reserved drippings in skillet; cook, whisking constantly, over medium-high heat 10 to 12 minutes or until thickened. Serve gravy with steaks. Garnish, if desired. (**This makes alot of gravy, consider halving recipe**)

Saturday, July 14- I came across tonight's shrimp dish and the side I plan to make, Black Bean Salad, on simplyrecipes.com  I have made the salad previously and we have enjoyed it.  I may decide on serving these on soft tacos with a garnish of the salad.  In that case I will half the salad.  I will also omit the avocado from the salad.

Cilantro Lime Shrimp Recipe

If you are using frozen shrimp, defrost them by placing them in a bowl of ice water or cold water. Adding a little salt to the water will help the shrimp retain their briny flavor.

  • 2 Tbsp high smoke point oil such as grape seed oil, or canola oil
  • 1-2 Serrano chiles, sliced into thin rings
  • 1-2 garlic cloves, sliced thinly
  • 1 pound shrimp, peeled and deveined
  • Salt
  • 1/4 cup chopped cilantro
  • 1-2 Tbsp lime juice

1 Place a large sauté pan or a wok over your strongest burner on high heat. Let the pan heat up for a minute and then add the oil. Use a high smoke point oil since you will be cooking the shrimp on very high heat. Let the oil heat until it's shimmering. If it starts to smoke, remove the pan from the heat for a moment.
2 Add the chiles to the pan and toss to coat with oil. Cook 30 seconds. Add the shrimp and garlic to the pan and sprinkle with salt. Toss to coat with oil. Let the shrimp cook undisturbed for 1 minute before tossing again so they get a little bit of a sear. Stir-fry until cooked through, about 2-3 minutes.

3 Turn off the heat and mix in the cilantro, then the lime juice.
Serve hot or at room temperature. Serve alone, over rice, or in a folded heated flour or corn tortilla.
Yield: Serves 3-4.
  
Black Bean Salad Recipe

  • 1 (15 ounce) can of black beans, thoroughly rinsed, and drained (or 1 1/2 cup of freshly cooked black beans)
  • 1 1/2 cups frozen corn, defrosted (or fresh corn, parboiled, drained and cooled)
  • 1/2 cup chopped green onions or shallots
  • 2 fresh jalapeño peppers, seeded and minced, or 1 whole pickled jalapeño pepper, minced (not seeded)
  • 3 fresh plum tomatoes, seeded and chopped
  • 1 avocado, peeled, seeded, and cut into chunks
  • 1/2 cup fresh chopped cilantro
  • 1/4 cup fresh chopped basil
  • 2 Tbsp lime juice (about the amount of juice from one lime)
  • 1 Tbsp olive oil
  • 1/2 to 1 teaspoon of sugar (to taste)
  • Salt and pepper to taste

Make sure to rinse and drain the beans, if you are using canned beans.
In a large bowl, combine the beans, corn, onions, jalapeno chile peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil. Add sugar and salt and pepper to taste. (The sugar will help balance the acidity from the tomatoes and lime juice.) Chill before serving.
Serves 6 to 8.

Sunday, July15- I plan to make the Stuffed Peppers I have made a number of times now and we all enjoy, using the Bell Peppers from my Box.
Stuffed Peppers  WW Pts: 7
  • 4 large peppers (8 banana peppers)
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1 (14 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 1/4 teaspoons salt, divided
  • 1/4 teaspoon ground black pepper, divided
  • 1 egg
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • 1 pound Italian sausage
  • 3/4 cups bread crumbs
  1. Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
  2. Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 3/4 teaspoon salt and 1/8 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
  3. Meanwhile, in a large mixing bowl, combine egg, 1/4 teaspoon salt, 1/8 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in sausage, bread crumbs and 1 cup of the tomato sauce mixture.
  4. Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
  5. Bake uncovered in preheated oven for 1 hour. (optional- last 15 minutes sprinkle shredded mozzarella cheese)

Monday, July 16-  Ballet and Golf Night with all of us literally in different directions and all in the midst of meal time, it will be breakfast for dinner, leftovers or even take out.

Tuesday, July 17Marinated Grilled Sliced Steak over Brazilian Rice Beans will be this evening's meal.
The steak will be marinated in lime juice, olive oil, salt, pepper, cumin and chili pepper.  After marinating it will be grilled and served over Brazilian Black Beans (Feijão) and Rice.

2 cloves garlic (pressed)
bacon (chopped)

  1. Fry up bacon until crispy
  2. Add garlic and saute
  3. Add beans with juices and add about 1/4 cup water to pan
  4. Simmer for 10 minutes

1-2 garlic cloves minced
1 cup long grain rice
1 1/2 cups water
1 tsp salt
  1. Saute onion until soft
  2. Add garlic and saute.  Add rice and stir fry.
  3. Add water and salt, bring to boil.
  4. The water level will begin to drop.  Cover and reduce heat.
  5. When the rice is cooked, turn off the heat and let the rice rest for about 10 minutes.

Lacking Inspiration....

Well I have been really good and continue to make warm meals at home for my family.  Unfortunately, I have lost inspiration and have been stuck in a pretty boring dinner menu.  The same pasta and fajita meals seem to find their way onto our dinner table at least once a week.  Mind you, in the past it was rare to eat the same meal 2 weeks in a row (unless of course it was left over night).  Without my weekly delivery of produce to dictate our menu as well as create inspiration and drive us to try new foods, I am left to fall into this dismal spiral of uninteresting meals- although still tasty.
So as well as being committed to continue to create homemade and healthy meals for my family, I will pledge to become more creative and inspired again!

Thursday, February 9- Marinated Grilled Sliced Steak over Brazilian Rice Beans will kick off my menu!

Friday, February 10-  I have adapted several recipes to create tonight's meal of Pasta with Sausage, Beans and Greens.

Pasta with Sausage, Beans and Greens WW Pts: 8
  • 3 cups small sized pasta (i.e. shell)
  • 3/4 lb. Italian turkey sausage - half hot, half sweet or plain
  • 3 cups of kale, broccoli rabe, or baby spinach, chopped (if using kale, or leafy green, remove and discard center stem) **I will be using spinach**
  • 2 tsp sage
  • 3 garlic cloves, minced
  • 1 1/2 to 2 cups chicken stock
  • 1 15-ounce can of white beans, rinsed and drained
  • 1/4-1/2 teaspoon hot red pepper flakes
  • 1/4 cup grated fresh Parmesan cheese
  1. Cook pasta in salted water as directed on the package, until al dente.
  2. While pasta is being prepared, sauté Italian sausage until brown - about 8 minutes crumbling sausage. Use a slotted spoon to remove sausage from pan. Add garlic and sage to the same skillet; stir/saute for about 30 seconds or until fragrant. 
  3. Add in the beans, spinach and broth; bring to boil.
  4. Lower heat and simmer about 5 minutes or until spinach is just tender.
  5. Add pasta and sausage to green mixture and Parmesan cheese (optional). Add chile pepper flakes, salt and pepper to taste and simmer until heated through. Serves 6- 1 1/2 cups.
    **I had purchased fully cooked Italian chicken sausage earlier in the week.  I will dice this up and saute in place of the loose turkey sausage.**  
Saturday, February 11-  I came across this concept for dinner while searching for inspiration on the internet.  Southwestern Chicken Bake - Take a taco seasoning packet and empty into a plastic bag.  Add chicken and shake to coat.  Bake chicken in a 350 degree oven until cooked through.  I will serve the chicken with any left over rice and beans.  If there aren't any leftovers then I might bake the chicken with sliced peppers and onions and then serve the dish as fajitas or even over rice.  Still working out the serving part of the meal :)                                                                                   


Sunday, February 12-  With the wintry weather, I feel like roasting.  I stumbled across this recipe and was instantly drawn to it, Beef Roast Braised in Zinfandel, www.simplyrecipes.com.

Beef Roast Braised in Zinfandel Recipe

  • 1 (3 1/2 pound) chuck roast, boneless
  • Salt and ground black pepper
  • 4 oz pancetta, cut into 1/4-inch cubes
  • 2 medium onions, chopped medium (about 2 cups)
  • 2 medium carrots, chopped medium (about 1 cup)
  • 2 ribs celery, chopped medium (1 cup)
  • 1 Tbsp tomato paste
  • 3 medium cloves garlic, minced or pressed through garlic press (about 1 tablespoon)
  • 1 (750 ml) bottle Zinfandel wine (can substitute Cabernet Sauvignon)
  • 1 can (14 1/2 ounces) diced tomatoes, drained
  • 1 Tbsp chopped fresh oregano
  • 1 teaspoon minced fresh rosemary
1 If your roast is very fatty, trim some of the fat. But it is important to keep some fat, as this will keep the roast moist while braising. In many supermarkets chuck roasts will already be properly trimmed. Salt the roast well and set aside at room temperature while you prepare all the other vegetables.

2 Pour a little water into a Dutch oven or other heavy, lidded pot. Set the pot over medium heat and add the diced pancetta. As soon as the water begins to simmer, lower the heat to medium-low and slowly crisp up the pancetta; the water allows some of the fat in the pork to render out without charring the pancetta. When the pancetta is crispy and brown, remove it with a slotted spoon and set aside.

3 Preheat the oven to 300°F. Pat the beef roast dry with a paper towel, increase the heat to medium and brown all sides in the pot. Once the meat has browned remove it to a bowl and add the onions, carrot and celery. Sprinkle salt over the vegetables while they cook. Increase the heat to medium-high and sauté for 2-3 minutes.

4 Add the tomato paste and stir well, sauté for another 1-2 minutes. Add the garlic and cook a minute more. Increase the heat to high and add the tomatoes, the pancetta, herbs and red wine. Nestle the beef roast into the pot, cover, place in the 300°F oven and cook for 3 hours. At the halfway point, use tongs to turn the beef roast over.

5 Remove the pot from oven and transfer beef to a large bowl; tent with foil to keep warm. Allow the liquid to settle in the pot for a few minutes, if you'd like, skim off some of the fat with a wide shallow spoon. If you have an immersion blender, use it to blend the contents of the pot. If you don't, use a whisk to help break down the vegetables. Boil the sauce until it is reduced to about 3 1/2 cups. Strain liquid through large fine-mesh strainer, pressing on solids with spatula to extract as much liquid as possible; you should have a couple cups strained sauce. Add any accumulated juices from the bowl you have the beef in. Boil the sauce again until it has reduced to 1 1/2 cups. Season sauce to taste with salt and pepper.
5 Cut the meat into roughly 1/2-inch-thick slices and pour the sauce over them. Serve with a bold red wine and crusty bread or mashed potatoes.

Yield: Serves 6.

Monday, February 13- A slow cooker meal works best for tonight due to limited time to prepare a great meal.  We made this for the Superbowl using our family recipe but substituting ground turkey for the ground beef. **I will update with recipe shortly.** WW Pts: 3- 1 cup


Tuesday, February 14-  Well it is Valentine's Day and I really don't want to cook.  I think hubby will be bringing home a bento box from Red Bowl.


Wednesday, February 15-  This is a crazy night with Girl Scout meetings and piano lessons.  Again, tonight needs to be simple and quick.  I think the girls will have Mac N' Cheese or quesidillas, 2 of their favorites.  My husband and I will eat later either leftovers or fajitas with peppers and onions.

August 3- August 9 Latin and Asian Influences

This week our Produce Box includes:

The watermelon and peaches are great for snacks and sides for dinner!

Wednesday, August 3-  After delivering as a sub driver for the Produce Box as well as having company arriving, I plan on making it easy and simple.  Hamburgers with corn on the cob and sliced watermelon.

Thursday, August 4Sausage and Peppers served with warmed bread and a bottle of wine.  I will make a small side of pasta as well.  My company is bringing Italian sausage from the Northeast (the best in my opinion) and I will add some of the peppers from my box to them.  I will also be using the tomato sauce I made from my Box's tomatoes and froze a few weeks ago.

Friday, August 5-  Part of my company is going out, I am thinking the rest of us will dine out for dinner tonight too!  Maybe Tribeca Tavern or Red Robin....

Saturday, August 6-  Per special request I am making my delicious Chicken Enchiladas.  They are easy to make and even easier to double the batch for my house guests.  I'll also make a black bean salad using some of my box's corn.  I have made the salad before and enjoyed it!

Chicken Enchiladas  (I will be doubling the recipe tonight) approx. 7 WW Pts.
1 lb chicken
4oz can of chopped green chile peppers (I'll be using my hot green chiles from last week's Box)
1 small onion
1 can of cream of chicken soup
1/2 cup Sour Cream
1 tsp chili powder
Small Can of Enchilada Sauce
1 package of large sized soft flour tortillas
1 package Mexican cheese (or cheddar)

1. Heat large skillet on med/high heat. Add 1-2 tablespoons of olive oil to coat pan
3. Cook chicken through about 8-10 minutes.
4. While chicken is cooking chop onion
5. Remove chicken to cutting board, add chopped onion to skillet and chili powder
6. While onion is cooking, dice up chicken
7. In a small bowl combine the can of cream of chicken soup, 1/2 cup of sour cream & 2 tablespoons of enchilada sauce. Mix and set aside.
8. Once onion is tender add chicken, green chilies, about 1/4 cup of sour cream mixture & enchilada sauce (add enough to add moisture to skillet about 1-3 tablespoons) Stir and Heat through.
9. In a 9 x 13 baking dish lightly cover bottom of pan with the sour cream mixture.
10. Add chicken mixture to tortillas and roll up, place seam side down in baking dish. (tortillas can be touching each other in dish)
11. Cover tortillas with remaining sour cream mixture and sprinkle with cheese
12. Bake in a 350 degree oven covered for 20-25 minutes then uncover and bake additional 5-10 minutes or until cheese is bubbly and lightly browned.

**Meal can be prepared ahead of time and refrigerated. When ready to bake add 15 minutes to bake time or until heated through.

Sunday, August 7-I will use my remaining peppers in tonight's meal of either  Pork Fried Rice or Taste of Thai Peanut Noodle Recipe.  I am not sure which I will make tonight.

Taste of Thai Peanut Noodle Toss Recipe
1/2 Box (8 oz) Rice Noodles
1 TBSP oil
3 cups favorite vegetables chopped
1 tsp Salt
1 13.5 oz can of Coconut Sauce
1 packet (both inner envelopes) Peanut Sauce Mix
1 1/4 lbs chicken or beef thinly sliced

Soak noodles according to stir fry directions. Heat oil in wok over medium high heat. Add vegetables, salt and meat. Saute 3 minutes. Add coconut milk and peanut sauce. Mix. Bring to boil while stirring and boil 3 minutes. Add drained noodles and combine. Cook while stirring until noodles are firm but tender. Add peanuts for garnish.

Pork Fried Rice
  • vegetable oil
  • 3 eggs
  • 3 cloves garlic thinly sliced
  • half an onion finely chopped (I used a red onion but any variety or even scallions can be substituted)
  • 2 pork chops cubed
  • 2 cups of diced vegetable medley (I used my peppers as part of the medley)
  • 3 cups of cooked cold rice
  • 3 tablespoons soy sauce
  1. Heat  a tablespoon of oil in a pan.  Add eggs and stir (like making scrambled eggs) remove from heat when just set.
  2. Heat 2 tablespoons of oil in wok.  Add garlic and onion.  Saute for 5 minutes then add pork. 
  3. When pork is cooked through add vegetable mix.  Cook for about 5 minutes.
  4. Add rice and soy sauce.  Separate rice and incorporate the soy sauce into mixture.
  5. Once rice is heated through add eggs.  Cook for an additional 2-3 minutes.  If mixture is dry add some more soy sauce.
Monday, August 8- This has become one of my favorite new dishes, Squash and Zucchini Burritos. I discovered this dish through a friend. There after, I added my twist and viola! A sumptuous summer dish.  This will use the squash and zucchini from my Box.

Tuesday, August 9-  I am not sure what tonight's meal will be yet.  Maybe leftovers?  It will be quick and easy since it is golf lesson night.

It worked! Menu January 19- January 25

I don't know why I am surprised it worked.  I did it all Summer long.  Planning out last week's menu yielded different dinners breaking the habit of same old same old every night.  I also didn't feel like I lived at the grocery store.  Instead I made 2 trips, 1 for my initial weekly shopping and another for fresh bread and other fresh produce.  Plus, we had ample leftovers to freeze for another day as well as delicious lunches!

Wednesday, January 19Marinated Steak Fajitas will be tonight's meal.  We will not be able to eat as a family due to my daughter's book club meeting.  This meal is easy to make and my husband can reheat the steak easily to eat when he comes home.  

Thursday, January 20-  Tonight needs to be a quick dinner fixing evening due again to meetings and appointments.  As long as pork is on sale at the grocery store, I plan to use my crock pot to make Pulled BBQ Pork Sandwiches.  If boneless pork ribs are not on sale I will use boneless chicken breasts from my freezer.  I will make the Black Bean Salad I had put on last week's menu but didn't make (opting for a leftover night in place of Tuesday's menu).

Crock Pot Pulled BBQ Sandwiches
Place pork in crock pot.
Pour BBQ Sauce over meat and add your favorite grilling seasonings.
Cook on low for 6 hours.
Drain some liquid from crock pot, pull meat apart, add more BBQ sauce and cook an additional 15 minutes or until sauce is heated through.
Serve on sandwich rolls.

Friday, January 21-  We are having a dinner guest this evening.  As a treat for my daughter and her guest, I plan on picking up a Papa Murphy pizza to serve for dinner. 

Saturday, January 22Lemon Shrimp and Linguine  My father makes this meal as part of his VFW Dinners.  He also made it while visiting over the holidays and it was great.  I'll need to call him to get this recipe.

Sunday, January 23-   We are surprising our daughters with tickets to the live performance of The Lion King.  Since we won't get home until the early evening, I think we might use our Twongo coupon at Abbey Road.

Monday, January 24-  I think I have a beef roast in my freezer.  If so, I will use my slow cooker again tonight to make an Onion Flavored Beef Roast.

1 Onion cut up
1 Packet of Dried Onion Soup Mix
1 Cup of Beef Broth
1/4 cup of Red Wine
Onion Seasoning, Salt and Pepper
  1. Place cut up onion in slow cooker
  2. Using Onion Seasoning, salt and pepper, season the roast and place in slow cooker.
  3. Dissolve soup mix into the cup of broth and pour into slow cooker.
  4. Pour wine into the slow cooker and place on Low heat for 6-8 hours.
  5. If you wish to make a gravy: Take about 1-2 cups of liquid from slow cooker and pour into a saucepan, reserving 1/4-1/2 cup.  Dissolve approx. 1-2 tablespoons of flour into the reserved liquid.  Whisk the mixture into the saucepan.  Bring to boil and then simmer until thickened.
I am thinking Apple Sweet Potatoes will be a nice accompaniment to this dish.  (Recipe to come)

Sour Cream Potato Salad
Potatoes
2-3 Hard Boil Eggs
Mayonassie
1/2 cup Sour Cream
3 Green Onions
Bacon Bits
Shredded Cheddar Cheese
  1. Boil potatoes until tender.
  2. Quarter potatoes.
  3. Mix mayo and 1/2 cup of sour cream into potatoes.
  4. Add 2-3 cut up hard boil eggs, diced tomatoes, 3 chopped green onions, bacon bits and shredded cheddar cheese

New Year's Resolution January 12-16 Menu

With the end of The Produce Box season at the end of November, I have found myself falling back into older habits (forgetting to plan out a weeks worth of menus BEFORE going food shopping). So with a new year comes resolutions, one of those for me is to get back in the saddle with planning out my meals each week. Not only does it mean making less trips to the grocery store each week but I find myself trying out new recipes or making different meals rather than making the same handful of dishes each week.

I have decided this week's menu will be based on the many recipes I have blogged and made this past Produce Box Season!

Wednesday, January 12- Due to an ice storm my dinner out with friends was postponed to tonight. So I need something quick and easy for my girls and husband. Macaroni and Cheese is always a crowd pleaser with a side salad for my husband and fresh fruit for my girls.

Thursday, January 13- From the end of August I will be making Butternut Vegetable Chicken Soup. I had frozen some of this soup and my Dad had it while visiting for the holidays. He too thought it was delicious. With these cold wintry days a tasty warm soup would be an ideal dish. My grocery store usually has pre-cut butternut squash, so if all fails I can always buy this.

Butternut Vegetable Chicken Soup
1/4 cup olive oil
1 cup finely diced onion
2 teaspoons minced garlic
4 large carrots, thinly sliced
2 cups peeled and cubed butternut squash
9-11 cups chicken broth
2 red potatoes, cubed
1/2 teaspoon dried thyme
1/4 tsp. Each- nutmeg, cloves, allspice & cayenne pepper
1 teaspoon salt
1/2 teaspoon ground black pepper
4 cups chopped baby spinach
2 (16 ounce) cans great Northern beans, rinsed and drained
3/4 cup half and half
1-2 cups diced or shredded cooked chicken breast
Directions
1. Heat the oil in a large Dutch oven over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the carrots and butternut squash; cook and stir until squash begins to brown, about 15 minutes.
2. Pour in the broth. Stir in the red potatoes, thyme, salt, pepper and spices, and bring to a boil. Reduce heat and simmer until vegetables are tender, about 45 minutes. Stir in the spinach and great Northern beans, and simmer until the spinach is tender, about 10 minutes.
3. Pour about 3 cups of the soup into a blender, filling the pitcher no more than halfway full (you may have to do this in two batches). Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Return the pureed portion of the soup to the soup pot, leaving the remaining soup chunky. Alternately, you can use a stick blender and partially puree the soup right in the cooking pot. Stir in half and half and warm through.

Friday, January 14- I need something simple and quick tonight since my husband will be going out with friends after dinner. I found this past recipe from the first few days of September. Cheesy Grilled BBQ Chicken Wraps recipe at Kraftfoods.com However, I will add diced red onion and warmed black beans to each wrap. In an effort to make things easy, I will cook the chicken up Thursday night while making the soup.

Saturday, January 15- The weekend always seems to be filled with all sorts of activities and this weekend is no different. Therefore, it's the perfect day for a Crock Pot Dinner! (From October 9th)

Beef Stew
Ingredients
3 pounds cubed beef stew meat
1/4 cup all-purpose flour
1/2 teaspoon salt, or to taste
3 tablespoons olive oil
1 cup baby carrots
4 large potatoes, cubed
1-2 cloves garlic, minced
1 teaspoon ground black pepper
2 cups beef broth
1 (1 ounce) package dry onion soup mix
1 onion, chopped
1/4 cup red wine
1/4 cup liquid (wine, beef broth or water)
2 tablespoons all-purpose flour

Directions
1. Place meat in a large plastic bag. Combine 1/4 cup flour with 1/2 teaspoon salt; pour into the bag with the meat, and shake to coat.
2. Heat olive oil in a large skillet over medium-high heat. Add stew meat, and cook until evenly browned on the outside. Transfer to a slow cooker along with the carrots, potatoes, onions, minced garlic and pepper.
3. Mix together 2 cups of beef broth and dry soup mix; pour into the slow cooker. Pour wine into slow cooker.
4. Cover, and cook on High for 30 minutes. Reduce heat to Low, and cook for 6 hours, or until meat is fork tender. In a small bowl or cup, mix together 2 tablespoons flour with 1/4 cup of liquid (beef broth, wine or water). Stir into stew, and cook uncovered for 15 minutes, or until thickened.

Sunday, January 16- From early November a simple and tasty dish-
Sweet Potatoes and Stuffing with Pork
I diced up sweet potatoes along with an onion and a bell pepper. I poured Italian dressing over the vegetables and baked for 15 minutes at 375 degrees. I then pushed the veggie mixture along the sides of the pan and spread stuffing mixture (which was mixed with 1 1/2 cups of water) down the center. I then placed 3 thick cut pork chops on top of the stuffing. I returned the pan to the oven for 45 minutes. Delicious, easy and simple!

Monday, January 17- Sausage and Peppers served over pasta with crusty bread. The kids are off and with a treat of lunch with Dad I opted for a quicker dinner. This makes great Italian subs for lunch the next day!

Tuesday, January 18- Grilled Steak with Black Bean Salad will be tonight's meal. I found this Black Bean Salad in July and we thought it was superb!

Finding a Good Black Bean Salad Recipe

As blogged earlier, Monday's menu consisted of Marinated Chicken Fajitas using the marinade from the steak fajitas we had last week. Along with grilled peppers (from my Produce Box) and onions (from DJ's Berry Patch). After slicing the peppers and onions, we drizzled with some olive oil, dash of balsamic vinegar and then grilled them.

I found a Black Bean Salad recipe which also used fresh corn that I had picked up at the farm stand as well. This salad appealed to our palate much better than the corn and black bean salad we made last week.

If you follow the link, note the information above the recipe which outlines the basics to any black bean salad. So you can adjust to your family's liking. For this salad, I omitted the avocado and replaced the jalapenos with ground cumin.
