This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

April 4- April 10

The Baked Rice and Peas was such a success I plan on repeating it again this week for company!  We are entertaining family from out of town as well as hosting Easter Dinner for everyone.

Wednesday, April 4-  I'm thinking sausage with peppers and onions sandwiches along with a macaroni salad.
Lightened Up Macaroni Salad
Servings: 7 Size: 3/4 cup Points: 3 pts
  • 6 oz dry elbow macaroni
  • 1/4 cup light mayonnaise
  • 2 tomatoes, diced
  • 1/2 cup chopped bell pepper
  • 1/4 cup red onion, diced
  • 1 tbsp white vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp oregano
  • dash of garlic powder (I am using Garlic Garlic)
  • salt and fresh pepper to taste
Cook pasta in salted water according to package directions. While pasta is cooking, combine all ingredients and mix well. When pasta is done (do not overcook) rinse under cold water. Combine pasta with other ingredients and season with salt and pepper. Chill before serving. 
 
Thursday, April 5- Company is bringing delicious Jersey pizzas with them.  We'll most likely grill them up on the BBQ.  Also homemade Brazilian cheese balls and chicken balls will round out our eclectic meal.  Dessert will be homemade Brazilian coconut balls!
 
Friday, April 6-  With house guests and cooler temps, I think I will bake a lemon and garlic chicken and serve the baked rice and peas.  If time allows I will pick up Virgina Rolls at my local Great Harvest Bread Company.

Baked Rice and Peas
Servings: 5 • Serving Size: 3/4 cup Old Points: 3 pts • Points+: 4 pts
Calories: 173.7 • Fat: 1.5 g Protein: 5.5 g Carb: 34.4 g Fiber: 2.0 g 
  • 1 cup uncooked long grain rice
  • 14.5 oz can fat free chicken broth (my notes add a little more liquid)
  • 1 tsp butter
  • 2 tbsp parmesan cheese
  • 1/4 diced onion
  • 3 cloves garlic minced
  • 5 oz (1/2 package) frozen peas
Preheat oven to 350°. Combine all ingredients in a oven-safe baking dish with a lid. Place a piece of tin foil between the lid and the dish to ensure no steam escapes. Bake 50 minutes (do not open, do not peek, do not stir to rice). When 50 minutes is up, remove from oven and let it sit for 10 more minutes to allow the steam to finish cooking the rice, (do not open, do not peek, do not stir to rice). After 10 minutes, remove lid and fluff with a fork.

Saturday, April 7-   Not sure yet if Grandpa is taking the girls out for their traditional CiCi dinner tonight.  Will need to wait and see about this evenings dinner.


Sunday, April 8Easter Dinner will consist of a deep fried turkey breast, grilled lamb, sweet potato casserole and Southern green beans.  I may pick up additional Virgina Rolls, if they are as delicious as I think they will be.  Dessert will be lemon squares and possibly a cheesecake.
Sweet Potato Casserole 7 WW Points  
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans
1/4 cup margarine, melted
1/2 tsp ground cinnamon
4 medium sweet potatoes, peeled and halved
1/2 cup sugar
1 1/2 tsp vanilla extract
1 large egg white
1 (5 oz) can evaporated milk

1. Preheat oven 350 degrees
2. Combine first 5 ingredients in small bowl, stirring to form streusel. Set aside
3. Place potatoes in pot covered with water. Bring to boil, cover and simmer 30 min or until tender. Drain. Mash in large bowl.
4. Stir in 1 cup of streusel topping, sugar, vanilla, egg white and milk.
5. Spoon into 2-qt. casserole coated with cooking spray. Top with remaining streusel.
6. Bake for 45 min.
Serving: 3/4 cup

Southern Green Beans
4 slices bacon
1 large onion sliced
4 cans green beans
salt and black pepper

Fry bacon, remove bacon before it becomes crispy.
In bacon fat fry onion until tender.
Pour 4 cans of green beans into pot. If more water is needed add until green beans are covered.
Season with salt and pepper.
Add bacon.
Bring to boil then let Simmer for about 30-45 minutes. (add water as necessary)
 
Monday, April 9-  Not sure yet what I will be preparing this evening.  Possibly my delicious chicken enchiladas, always a crowd pleaser!
Chicken Enchiladas  approx. 7 WW Pts.
1 lb chicken
4oz can of chopped green chile peppers (I'll be using my hot green chiles from last week's Box)
1 small onion
1 can of cream of chicken soup
1/2 cup Sour Cream
1 tsp chili powder
Small Can of Enchilada Sauce
1 package of large sized soft flour tortillas
1 package Mexican cheese (or cheddar)

1. Heat large skillet on med/high heat. Add 1-2 tablespoons of olive oil to coat pan
3. Cook chicken through about 8-10 minutes.
4. While chicken is cooking chop onion
5. Remove chicken to cutting board, add chopped onion to skillet and chili powder
6. While onion is cooking, dice up chicken
7. In a small bowl combine the can of cream of chicken soup, 1/2 cup of sour cream & 2 tablespoons of enchilada sauce. Mix and set aside.
8. Once onion is tender add chicken, green chilies, about 1/4 cup of sour cream mixture & enchilada sauce (add enough to add moisture to skillet about 1-3 tablespoons) Stir and Heat through.
9. In a 9 x 13 baking dish lightly cover bottom of pan with the sour cream mixture.
10. Add chicken mixture to tortillas and roll up, place seam side down in baking dish. (tortillas can be touching each other in dish)
11. Cover tortillas with remaining sour cream mixture and sprinkle with cheese
12. Bake in a 350 degree oven covered for 20-25 minutes then uncover and bake additional 5-10 minutes or until cheese is bubbly and lightly browned.

**Meal can be prepared ahead of time and refrigerated. When ready to bake add 15 minutes to bake time or until heated through.
 
Tuesday, April 10-  It's just half the family for dinner tonight.  Company will have left before dinner and the other half of the family will be at golf lessons.  We either get take out or do pancakes for dinner.

March 26- April 1

The children were tracked out and we traveled during this time as well.  So my menus weren't always followed or even created during this time.  But now we are back to our typical schedule which also means better meal planning.

Monday, March 26-  We hit the week running with many after-school activities scheduled this week.  Tonight is soccer practice.  Therefore, I need a simply and easy meal to prepare between homework and running out the door for practice.  Fajitas for me and quesidillas for the girls tonight!

Tuesday, March 27-  I may not be home for dinner, in which case it's Mac N Cheese.  Should my plans fall through I will throw something together....

Wednesday, March 28-  I am thinking tortellini in a garlic white sauce with asparagus or a fresh salad.  I will use prepackaged tortellini and a powder sauce.

Thursday, March 29-  It's just us girls tonight.  I am thinking breakfast for dinner tonight!

Friday, March 30-  Grilled steak along with this tweaked rice recipe I came across on skinnytaste.com
Baked Rice and Peas

Saturday, March 31-  I am thinking of grilling boneless pork strips and serve it along with baked beans and maybe some corn on the cob (most likely the frozen ones since it's way too early for fresh).

Sunday, April 1-  I would like to roast a chicken tonight.  If I do I will add some cut lemon into it's cavity along with some garlic cloves.  I plan on making Southern Green Beans and if there is any rice left from earlier in the week that will round out tonight's meal.  If we don't have any of the rice left, I'll pick up some small dinner rolls.
Southern Green Beans
4 slices bacon
1 large onion sliced

New Year

Well between no Produce Box , the kids tracked out and the Holidays I have not been very good about planning my weekly menus.  Here's the start to a New Year and an effort to keep planning my menus despite the hiatus of the Produce Box.

Monday, January 3, 2012-  With company in town my husband had someone to eat lamb with.  (I don't are for this type of meat.)  The rest of us had steak along with green beans I froze from an earlier Produce Box and baked potatoes.

Tuesday, January 4-  With very cold temperatures it seemed perfect for soup.  I threw together Tastefully Simple's Potato Soup, along with the addition 2 diced potatoes, and I made Tastefully Simple's Beer Bread using ginger ale which my kids prefer.

Wednesday, January 5-  Tonight needs to be rather easy and quick since we have a busy evening of music lessons and Girl Scout meetings.  Baked Italian Sausage served over spaghetti along with the left over bread from Tuesday.

Thursday, January 6-  I found the below recipe on Woman's Day Month of Recipes.  I plan to increase the garlic (and mince it), dice the onion and I will cut the chicken up after it is cooked and add it back to the pan in small slices.  I will also eliminate the olives since only one of my family members eats them.

Spanish-Style Chicken and Rice 9 WW Points




  • 1 tablespoon(s) olive oil
  • 1 1/2 pound(s) boneless, skinless chicken breasts, cut into 3-in. pieces
  • Kosher salt and pepper
  • 1  onion, thinly sliced
  • 1  green bell pepper, thinly sliced
  • 2 clove(s) garlic, thinly sliced
  • 2 can(s) diced tomatoes with chilies (such as Del Monte, Hunt’s or Ro-Tel)
  • 3/4 cup(s) long-grain white rice
  • 1/2 cup(s) fresh flat-leaf parsley, chopped
  • 1/4 cup(s) pimiento-stuffed olives, chopped (optional)
Directions
  1. Heat the oil in a large skillet over medium-high heat. Season the chicken with 1/4 tsp each salt and pepper and cook on one side until golden brown, about 3 minutes.
  2. Turn the chicken, moving it to the outsides of the skillet. Add the onion, bell pepper and garlic and cook, stirring occasionally, for 5 minutes.
  3. Add the tomatoes (and their juices) and 1 cup water to the skillet, then stir in the rice. Simmer, covered, until the rice is tender, 18 to 20 minutes. Sprinkle with the parsley and olives (if using).
Friday, January 7- My girls have a Girl Scout function tonight.  Which means they will probably be treated to Chick Fil La, while perhaps this will be an opportunity for a mini date night with my husband.


Saturday, January 8- This recipe was originally written for the stove top.  I plan to use my crock pot instead, as others on allrecipes.com have done, and serve it more as a stew.

Cider Pork Chop Stew Dinner 9 WW Points
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 bone-in pork loin chops, 1 inch thick
  • 1 tablespoon olive or vegetable oil
  • 2 cups apple cider
  • 4 medium red potatoes, cubed
  • 1 medium onion, cut into 1/2-inch pieces
  • 1 large carrot, cut into 1/2 inch pieces
  • 1 small turnip or rutabaga, peeled and cubed
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup half-and-half cream

Directions

  1. Combine the thyme, salt and pepper; rub over both sides of pork chops. In a large skillet over medium heat, brown the chops in oil on both sides. Remove and cut in small chunks.
  2. Add cider to the pan, stirring to loosen any browned bits. Place the potatoes, onion, carrot, turnip and pork chops into slow cooker.  Pour juices from pan over mixture.  Heat on low for 6-8 hours.
  3. For gravy, pour pan juices into a saucepan and bring to a boil; cook, uncovered, until reduced to 3/4 cup. In a small bowl, combine the flour, nutmeg and cream until smooth. Stir into reduced liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. 
  4. Pour gravy over meat and vegetables.  Serve in bowls.  Suggestion to serve over egg noodles or rice for a heartier meal.

Monday, January 10- I stumbled upon this recipe on allrecipes.com  I took other reviewers suggestions and the below recipe is based on them. 
Slow Cooker Beef Barley Soup  WW Points 7
  • 1 1/2 lbs. stew meat cubed
  • 1 onion, chopped
  • 2 tablespoons oil
  • 2 cloves garlic minced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 6 cups water*
  • 6 cubes beef bouillon cube*
  • 1 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/4 teaspoon ground black pepper
  • 2 (14 ounce) cans diced tomatoes
  • 3/4 to 1 cup pearl barley (not instant)
  • 3 cups frozen mixed vegetables
  • salt to taste
  • ground black pepper to taste
  • **6 cups of beef broth can be substituted for the 6 cups water and beef boullion

Directions

  1. Heat oil in pan and brown stew meat with chopped onion on stove top.  Remove and add to slow cooker.
  2. Add to slow cooker all ingredients except frozen vegetables.  Cook on low for 8-9 hours.
  3. Add frozen vegetables increase to High and cook 30-45 minutes.
  4. Season with additional salt and pepper to taste.

August 3- August 9 Latin and Asian Influences

This week our Produce Box includes:

The watermelon and peaches are great for snacks and sides for dinner!

Wednesday, August 3-  After delivering as a sub driver for the Produce Box as well as having company arriving, I plan on making it easy and simple.  Hamburgers with corn on the cob and sliced watermelon.

Thursday, August 4Sausage and Peppers served with warmed bread and a bottle of wine.  I will make a small side of pasta as well.  My company is bringing Italian sausage from the Northeast (the best in my opinion) and I will add some of the peppers from my box to them.  I will also be using the tomato sauce I made from my Box's tomatoes and froze a few weeks ago.

Friday, August 5-  Part of my company is going out, I am thinking the rest of us will dine out for dinner tonight too!  Maybe Tribeca Tavern or Red Robin....

Saturday, August 6-  Per special request I am making my delicious Chicken Enchiladas.  They are easy to make and even easier to double the batch for my house guests.  I'll also make a black bean salad using some of my box's corn.  I have made the salad before and enjoyed it!

Chicken Enchiladas  (I will be doubling the recipe tonight) approx. 7 WW Pts.
1 lb chicken

Sunday, August 7-I will use my remaining peppers in tonight's meal of either  Pork Fried Rice or Taste of Thai Peanut Noodle Recipe.  I am not sure which I will make tonight.

Taste of Thai Peanut Noodle Toss Recipe
1/2 Box (8 oz) Rice Noodles
1 TBSP oil
3 cups favorite vegetables chopped
1 tsp Salt
1 13.5 oz can of Coconut Sauce
1 packet (both inner envelopes) Peanut Sauce Mix
1 1/4 lbs chicken or beef thinly sliced

Soak noodles according to stir fry directions. Heat oil in wok over medium high heat. Add vegetables, salt and meat. Saute 3 minutes. Add coconut milk and peanut sauce. Mix. Bring to boil while stirring and boil 3 minutes. Add drained noodles and combine. Cook while stirring until noodles are firm but tender. Add peanuts for garnish.

Pork Fried Rice
  • vegetable oil
  • 3 eggs
  • 3 cloves garlic thinly sliced
  • half an onion finely chopped (I used a red onion but any variety or even scallions can be substituted)
  • 2 pork chops cubed
  • 2 cups of diced vegetable medley (I used my peppers as part of the medley)
  • 3 cups of cooked cold rice
  • 3 tablespoons soy sauce
  1. Heat  a tablespoon of oil in a pan.  Add eggs and stir (like making scrambled eggs) remove from heat when just set.
  2. Heat 2 tablespoons of oil in wok.  Add garlic and onion.  Saute for 5 minutes then add pork. 
  3. When pork is cooked through add vegetable mix.  Cook for about 5 minutes.
  4. Add rice and soy sauce.  Separate rice and incorporate the soy sauce into mixture.
  5. Once rice is heated through add eggs.  Cook for an additional 2-3 minutes.  If mixture is dry add some more soy sauce.
Monday, August 8- This has become one of my favorite new dishes, Squash and Zucchini Burritos. I discovered this dish through a friend. There after, I added my twist and viola! A sumptuous summer dish.  This will use the squash and zucchini from my Box.

Tuesday, August 9-  I am not sure what tonight's meal will be yet.  Maybe leftovers?  It will be quick and easy since it is golf lesson night.

May 18- May 24

This week's Produce Box contains:

Blueberries
Strawberries
Romain Lettuce
Pointed Head Cabbage
Cucumbers
1.5 shares of tomatoes


The fresh blueberries will probably be incorporated into blueberry pancakes or blueberry muffins.  The strawberries are a great snack as well as a wonderful way to jazz up toaster waffles!

As it always seems to happen a few things got reworked for the week.  Some meals were made on a different day and others were completely skipped.  Rather then prepare the meal I had planned for Friday, I took some of those ingredients and other ingredients from my Box and kitchen and made Pork Stir Fried Rice.   Unfortunately, the crock pork recipe was skipped over again!  One of these days I WILL make that recipe!
Pork Fried Rice
  • vegetable oil
  • 3 eggs
  • 3 cloves garlic thinly sliced
  • half an onion finely chopped (I used a red onion but any variety or even scallions can be substituted)
  • 2 pork chops cubed
  • 2 cups of diced vegetable medley (I used my garden peas, carrots, red pepper & bok choy)
  • 3 cups of cooked cold rice
  • 3 tablespoons soy sauce
  1. Heat  a tablespoon of oil in a pan.  Add eggs and stir (like making scrambled eggs) remove from heat when just set.
  2. Heat 2 tablespoons of oil in wok.  Add garlic and onion.  Saute for 5 minutes then add pork. 
  3. When pork is cooked through add vegetable mix except bok choy.  Cook for about 5 minutes.
  4. Add rice and soy sauce.  Separate rice and incorporate the soy sauce into mixture.
  5. Once rice is heated through add eggs and bok choy.  Cook for an additional 2-3 minutes.  If mixture is dry add some more soy sauce.
Wednesday, May 18-  Today is my youngest daughter's Birthday.  Per her request we are having a favorite of hers, Chick Fil A.  Followed by ice cream Birthday cake!
Thursday, May 19- Mexican tonight!  I'll make quesadillas for the girls and the adults will dine on either fajitas or soft tacos.  I'll also serve a fresh salad with the romaine, tomatoes and cucumbers from my Box.

Friday, May 20-  I'll make my homemade cole slaw with the cabbage from my Box and serve it along with grilled asparagus and BBQ Chicken Sandwiches.

BBQ Chicken
olive oil and a couple of cloves of garlic pressed in
3 or 4 chicken breasts.
Barbecue Rub

1. Rub oil on to chicken and then rub thoroughly with Barbeque Rub.
2. Place in Deep Covered Baker in microwave for 11 minutes.
3. Meanwhile, make barbecue sauce** (see below).
4. When chicken breasts are cooked, take out of deep covered baker and place on cutting
board and fork pull them apart OR cut up with the Salad Choppers right in the Baker. Place
pulled chicken back in baker and add barbecue sauce (about ½ - 2/3 of recipe).
6. Serve with buns.

Sauce: 1 cup ketchup, ¼ cup brown sugar, firmly packed, 2 tablespoons Barbecue Rub, 2 teaspoons vinegar
Combine ingredients in (2-qt.) Saucepan. Bring to a boil, stirring occasionally; remove
from heat. Reserve half of the sauce for serving.  

Cole Slaw
1 head of Cabbage shredded
1/4 pound shredded or julienne Carrots
1 Onion finely chopped
1/2 cup Mayonnaise
1 tablespoon Vinegar
2 teaspoons Sugar
1/4 teaspoon Salt

Mix Mayo, Vinegar, Sugar & Salt in non-reactivate bowl. Add shredded Cabbage, Carrots and diced Onion. Mix well. Chill before serving.

Saturday, May 21-  Since it Birthday Party day I think we may continue the celebration with pizza!

Sunday, May 22- Tonight would be ideal for the slow cooker pork recipe I haven't seemed to get around to making.  Between church in the morning and a late afternoon soccer game, knowing dinner is taken care of would be wonderful.  A fresh salad and bread would round out this meal nicely.

Easy Slow Cooker Pork Chops  12 WW Pts.

  • 4 (1 inch thick) pork chops
  • 1 tablespoon vegetable oil
  • 1 cup sliced onions
  • 1/4 cup chicken stock
  • 1 (20 ounce) can apple pie filling
  • 2 large sweet potatoes, peeled and cut into large chunks

Directions

  1. In a large skillet, heat oil over medium-high heat. Season pork chops with salt and pepper, and then brown them in the hot skillet. Remove from heat.
  2. Spray the inside surface of a slow cooker with cooking spray. Arrange sliced onions in the bottom, and place pork chops on top of onions. Pour chicken stock over chops, and top with apple pie filling. Cook on Low for 5 to 6 hours, adding sweet potatoes during the last 3 hours of cooking.

Monday, May 23-  I am going to try a recipe a friend posted on Facebook recently, Ranch Style Fish Tostadas.  I may vary the recipe slightly.

Ranch Style Fish Tostadas

8 corn tortillas (6 in.)
1 lb.  white Fish Fillets
1/2 cup KRAFT Cucumber Ranch Dressing or KRAFT Peppercorn Ranch Dressing, divided
2-1/2 cups  bagged coleslaw blend (cabbage slaw mix)
1 medium green pepper, chopped
1 medium  red onion, chopped
 
PREHEAT oven to 350°F. Spray both sides of tortillas with cooking spray; place in single layer on baking sheet. Bake 10 min. or until crisp and lightly browned.
MEANWHILE, heat large nonstick skillet on medium heat. Spray with cooking spray. Add fish; cook 5 min. on each side or until fish flakes easily with fork. Remove from heat. Use a fork to break up the fish into smaller pieces. Stir in half of the dressing.
ADD remaining dressing to coleslaw blend; toss lightly. Spoon evenly onto tortillas; top with fish mixture, peppers and onion.
