This is my first blog which was inspired by joining The Produce Box, a local community supported agriculture group. With a weekly delivery of fresh produce, I have been challenged to create healthy nightly meals using ingredients I may not have purchased on my own.

Below is a compilation of weekly meals using the produce delivered by The Produce Box as well as some other recipes which have inspired me.

Blueberry Kuchen

Kuchen is German for cake.  This is a coffeecake made with fresh blueberries.

1 1/2 cups sifted all purpose flour
2 tsp. baking powder
1/4 tsp salt
2/3 cup sugar
1/2 cup butter
1 egg
1/2 cup milk
2 cups fresh blueberries

Topping:
1/3 cup sugar
1/4 cup all purpose flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. salt
2 tbsp. butter

  1. Sift flour, baking powder, salt and sugar into a medium bowl.
  2. Cut in the 1/2 cup of butter to size of peas
  3. Break egg in measuring cup and beat.  Add enough milk to make 3/4 cup of liquid
  4. Add to dry ingredients and stir until blended
  5. Turn blueberries into batter
  6. Turn batter into a 8x8 greased baking dish
Topping
  1. Combine all ingredients except butter.
  2. Mix
  3. Cut butter into dry ingredients
  4. Work mixture with hands until crumbly
  5. Sprinkle over cake batter
Bake at 350 for 45-50 minutes.
